- 1 1/4 cups pecan pieces
- 3 1/2 cups flour
- 1 1/2 cups brown sugar, firmly packed
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1/2 cup canned pure pumpkin puree
- 2 large eggs, lightly beaten
- 1 tablespoon vanilla extract

%20here%20when%20there's%20a%20storm...has%20never%20battened%20down%20the%20hatches,%20never%20shoveled%20ice%20from%20the%20walk,%20never%20babysat%20the%20pipes%20so%20they%20won't%20freeze...he%20has%20some%20sort%20of%20internal%20radar%20that%20goes%20off%20when%20bad%20weather%20is%20about%20to%20move%20in...it's%2024%20degrees%20here,%20it's%2084%20degrees%20in%20Houston.%20%20I%20rest%20my%20case.%3C/p%3E%3Cp%3EBut%20really,%20it's%20the%20Pilgrim%20story%20all%20over%20again...Having%20survived%20the%20Mayflower%20(my%20trip%20down%20the%20big%20hill%20to%20the%20grocery%20store),%20I%20have%20set%20about%20preparing%20for%20the%20elements%20(adjusting%20the%20thermostat%20to%20MY%20settings)%20while%20I%20forage%20for%20food%20(in%20my%20refrigerator)%20and%20seek%20refuge%20with%20an%20old%20friend,%20the%20Hallmark%20Channel%20(equivalent%20to%20having%20Squanto%20over%20for%20tea).%20%20I%20shall%20prepare%20the%20feast%20BY%20MYSELF%20and%20being%20the%20good%20Pilgrim,%20I%20will%20let%20bygones%20be%20bygones%20(provided%20there's%20a%20%22sorry%20gift%22%20attached)%20and%20allow%20the%20Indian%20(the%20mister%20is%201/4%20Cherokee)%20to%20return%20from%20his%20hunting%20expedition%20(riding%20shotgun%20with%20Tony%20the%20Texas%20Tiger)%20so%20we%20can%20celebrate%20together%20(beats%20loading%20muskets%20and%20shooting%20arrows!)%20all%20the%20things%20we're%20thankful%20for.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Lightly%20grease%20one%20cookie%20sheet.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20melt%20butter%20over%20medium%20heat.%20%20Add%20pecans%20and%20cook,%20stirring%20constantly,%20until%20they%20are%20browned%20and%20fragrant,%20about%208%20to%2010%20minutes.%20%20Remove%20from%20heat%20and%20cool%20completely.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20add%20flour,%20brown%20sugar,%20baking%20powder,%20salt%20and%20pumpkin%20pie%20spice;%20stir%20well%20to%20combine.%20%20In%20a%20separate%20bowl,%20combine%20pumpkin,%20eggs,%20and%20vanilla,%20stirring%20well%20with%20a%20wire%20whisk.%20%20Slowly%20add%20pumpkin%20mixture%20to%20the%20flour%20mixture,%20stirring%20until%20the%20dry%20ingredients%20are%20moistened.%20%20(Mixture%20will%20be%20very%20crumbly;%20it%20wil%20gradually%20become%20moist%20after%20stirring).%3C/p%3E%3Cp%3EKnead%20or%20gently%20stir%20the%20cooled%20nuts%20into%20the%20dough.%20%20Place%20the%20dough%20on%20a%20lightly%20floured%20surface%20and%20divide%20into%204%20portions.%20%20Lightly%20flour%20hands%20and%20shape%20each%20portion%20into%20a%201x15-inch%20long%20log.%20%20Place%20the%20logs%20on%20the%20prepared%20cookie%20sheet.%20%20Bake%20for%2024%20minutes.%20%20Remove%20from%20oven%20and%20cool%20for%2015%20minutes.%20%20Reduce%20oven%20temperature%20to%20300%20degrees.%20%20Cut%20each%20log%20diagonally%20into%201/2-inch%20slices%20using%20a%20serrated%20knife.%20%20Place%20the%20slices%20on%20ungreased%20cookie%20sheets%20and%20bake%20for%2015%20minutes.%20%20Cool%20completely%20on%20wire%20racks.%20%20Makes%20about%2060%20biscotti.%3C/p%3E){kind=link}
