Receta Quinoa Vegetable Paella
Ingredientes
- 4-5 cloves garlic, minced
- 1 cup quinoa
- 1/4 tsp saffron, crushed
- 2 tsp Spanish smoked paprika
- 1.5 tsp ground cumin
- 1-2 tsp chili powder
- 1/4 tsp cayenne pepper
- 1 14-ounce can fire roasted diced tomatoes
- 1 14-ounce can light red kidney beans, rinsed and drained
- 2.5 cups vegetable broth
- 1 can artichoke hearts, rinsed and cut into quarters (optional, I omitted this because the husband doesnât like artichokes)
- 1/4 tsp salt, or more to taste
- 1 red onion, chopped

- 2 medium zucchini, halved lengthwise and sliced
- 1 cup fresh or frozen peas
- 1 can artichoke hearts, rinsed and cut into quarters (optional, I omitted this because the husband doesnât like artichokes)
- A few healthy splashes of lemon juice (about the juice of 1/2-1 lemon)
- 1/4 tsp salt, or more to taste
- Sliced almonds
