We love the fresh taste of ranch and the last time I grilled shrimp I decided to use a package of dressing mix in my prep. The potato/onion skewers need more cooking time so they go on first and the shrimp/tomato skewers cook pretty quickly. Depending on the size of your potatoes and shrimp you may need to adjust cooking time but on medium-low gas I cooked the potato skewers for about 25 minutes and the shrimp skewers I reduced the gas to low and cooked about 10 minutes. Don’t forget to turn often for even cooking!

  1. In a large bowl mix the dressing mix and oil.
  2. Toss the potatoes, tomatoes and shrimp well.
  3. Do not toss the onion chunks (they will all fall apart).
  4. Prepare 8 potato skewers alternating potatoes and onions.
  5. Prepare 12 shrimp skewers with 2 tomatoes each and dividing the shrimp.
  6. Heat the grill to medium-low.
  7. Cook the potato skewers on tin-foil, turning, until potatoes are cooked.
  8. Lower the heat to low and cook the shrimp skewers about 10 minutes, turning, until the shrimp are cooked.
  9. Serves 4
