- 2 sticks butter
- PAM cooking spray
- 3 cups sifted cake flour
- 1 1/2 Tbsp. baking powder
- 1/4 tsp. salt
- 1 3/4 cups sugar
- 1 1/4 tsp. vanilla extract
- 2 Tbsp. poppy seeds, plus more for garnish
- 1 Tbsp. finely grated lemon zest
- 1 cup milk
- 8 large egg whites, room temp (conserve 6 egg yolks for the lemon curd if making homemade)
- Pinch of cream of tartar
- 1 cup chilled heavy cream
- Lemon Curd (recipe below)
- 3/4 cup sugar
- 1 Tbsp. finely grated lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1 3/4 cup sugar
- 2 Tbsp. light corn syrup

%20I%20considered%20doing%20one%20short%20cut%20for%20the%20lemon%20curd.%20I%20have%20seen%20lovely,%20preserved%20lemon%20curd%20at%20our%20European%20market%20that%20would%20have%20worked.%20I%20decided%20not%20to%20because%20of%20the%20amount%20of%20left%20over%20egg%20yolks%20I%20would%20have%20to%20throw%20away%20from%20the%20cake%20batter.%20If%20I%20wasn't%20being%20so%20frugal%20these%20days,%20I%20would%20have%20just%20bought%20the%20lemon%20curd,%20dumped%20the%20egg%20yolks%20and%20saved%20quite%20a%20few%20steps.%20That%20being%20said,%20homemade%20lemon%20curd%20is%20fresh%20and%20delicious,%20so%20if%20you%20have%20the%20time,%20go%20for%20it!%20I%20also%20added%20vanilla%20in%20the%20seven%20minute%20frosting.%20It%20was%20the%20first%20time%20I%20made%20this%20frosting,%20and%20it%20was%20like%20whipped%20heaven.%20I%20don't%20know%20why%20it%20is%20called%20%22seven%20minute%22,%20it%20took%20longer%20than%20that.%20But%20it%20had%20a%20meringue-marshmallow%20fluff-like%20consistency%20that%20added%20to%20the%20dreaminess%20of%20this%20cake.%20It%20is%20quite%20a%20cake.%20But%20my%20mom%20is%20quite%20a%20mom%20and%20she%20deserved%20it!%3C/p%3E%3Cp%3ESeven-Minute%20Frosting%20(recipe%20follows)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%CB%9A.%20Spray%202%208x2%20round%20cake%20pans%20and%20line%20with%20parchment%20paper.%20(I%20actually%20had%20enough%20to%20fill%20one%20extra%20round%20pan%20lower%20than%20the%20others,%20so%20I%20got%20one%20extra%20%22layer%22%20on%20my%20cake%20to%20make%205%20layers)%20Set%20aside.%3C/p%3E%3Cp%3EInto%20a%20medium%20bowl,%20sift%20flour,%20baking%20powder%20and%20salt%20twice,%20set%20aside.%20(I%20did%20it%20once,%20no%20prob)%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20beat%20the%20butter%20until%20pale%20and%20fluffy.%20Gradually%20add%20the%20sugar,%20beat%20until%20fluffy%20(3%20minutes).%20Beat%20in%20vanilla,%20poppy%20seeds%20and%20lemon%20zest.%20Turn%20mixer%20to%20a%20lower%20speed%20and%20add%20the%20flour%20mixture%20in%20two%20batches,%20alternating%20with%20the%20milk.%20Beat%20until%20thoroughly%20combined%20after%20each%20addition.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20another%20mixing%20bowl,%20whisk%20egg%20whites%20with%20cream%20of%20tartar%20on%20low%20until%20foamy.%20Increase%20speed%20to%20medium-high%20and%20gradually%20add%20remaining%201/4%20cup%20sugar%20until%20stiff%20peaks%20form.%20Gently%20fold%20in%20egg%20whites%20to%20the%20butter%20batter,%20but%20careful%20not%20to%20over%20mix.%3C/p%3E%3Cp%3EDivide%20batter%20between%20pans,%20and%20bake%20until%20golden%20and%20a%20toothpick%20in%20the%20center%20comes%20out%20clean%20(about%2040%20minutes).%20Transfer%20to%20a%20wire%20rack%20to%20cool%20completely.%20To%20get%20the%20cakes%20out,%20I%20invert%20the%20pan%20with%20the%20cooling%20rack%20right%20under%20it,%20pull%20the%20pan%20off,%20peel%20the%20parchment,%20and%20then%20flip%20them%20right%20side%20up%20using%20another%20cooling%20rack%20on%20top%20of%20it%20and%20flipping%20it%20gently.%3C/p%3E%3Cp%3ETo%20make%20the%20filling,%20whip%20the%20whipping%20cream%20in%20a%20chilled%20bowl%20until%20soft%20peaks%20form.%20Fold%20in%20lemon%20curd,%20cover%20with%20plastic%20and%20refrigerate%20until%20firm,%20about%202%20hours.%3C/p%3E%3Cp%3ETo%20assemble,%20use%20a%20serrated%20knife%20to%20evenly%20slice%20the%20cakes%20horizontally%20in%20half.%20If%20you%20were%20able%20to%20make%20a%20small%20%225th%22%20layer,%20that%20layer%20will%20be%20the%20same%20size%20as%20the%20other%204%20so%20that%20one%20will%20not%20need%20to%20be%20cut.%20Brush%20away%20any%20crumbs.%3C/p%3E%3Cp%3EPlace%20on%20layer%20on%20a%20cake%20plate%20and%20spread%20with%20roughly%201%20cup%20of%20chilled%20lemon%20filling.%20Repeat%20until%20all%20layers%20are%20filled,%20finishing%20with%20a%20cake%20layer%20on%20top.%20Wrap%20in%20plastic%20and%20CAREFULLY%20and%20steadying%20it%20with%20your%20hands%20to%20keep%20the%20layers%20from%20sliding,%20%20put%20cake%20in%20the%20refrigerator%20to%20set,%20about%202%20hours.%3C/p%3E%3Cp%3EWhen%20set,%20frost%20with%20Seven%20Minute%20Frosting%20and%20garnish%20with%20poppy%20seeds%20and%20sugar%20covered%20lemon%20rind%20curls.%20Gently%20place%20toothpicks%20in%20the%20cake%20to%20recover%20with%20plastic%20wrap%20again%20until%20serving%20time.%20Toothpicks%20keep%20the%20plastic%20from%20ruining%20the%20frosting.%3C/p%3E%3Cp%3ELemon%20Curd:%3C/p%3E%3Cp%3E6%20large%20egg%20yolks%3C/p%3E%3Cp%3E3/4%20cup%20sugar%3C/p%3E%3Cp%3E1%20Tbsp.%20finely%20grated%20lemon%20zest%3C/p%3E%3Cp%3E1/2%20cup%20freshly%20squeezed%20lemon%20juice%3C/p%3E%3Cp%3E1/2%20stick%20unsalted%20butter,%20cut%20into%20pieces%3C/p%3E%3Cp%3ECombine%20yolks,%20lemon%20zest%20and%20juice%20in%20a%20medium%20saucepan.%20Cook%20over%20medium%20heat%20stirring%20constantly%20with%20a%20wooden%20spoon%20until%20mixture%20is%20thick%20enough%20to%20coat%20the%20back%20of%20a%20spoon,%208-10%20minutes.%20Pass%20mixture%20through%20a%20fin
