Ingredientes
- 1 lrg Green pepper, minced
- 2 x Cloves garlic, crushed
- 3 Tbsp. Extra virgin olive oil
- 2 x 16-ounce cans black beans
- 1/2 tsp Oregano
- 3 Tbsp. Vinegar
- 3 x Pimientos, chopped
- 3 c. Warm cooked rice
Direcciones
- Cook rice separately, hold aside. Saute/fry pepper and garlic in oil till softened. Add in rest of ingredients except rice. Cover and simmer till heated through. Taste for seasoning. Serve over rice.
