Receta Rice Pilaf With Currants And Cumin

Ingredientes
- 1 tsp Cumin seeds
- 2 c. Chicken stock or possibly canned low-salt broth
- 1 c. Long-grain rice
- 2 Tbsp. Dry currants
- 3 Tbsp. Minced fresh herbs (such as parsley, cilantro or possibly basil)
Direcciones
- Rice Pilaf with Currants and Cumin (Bon Appetit, Oct. 1993).
- Place 1 tsp cumin seeds in medium saucepan and heat over low heat till aromatic about 1 minutes. Add in chicken stock, long-grain rice and dry currants and bring to boil. Season rice mix with salt. Reduce heat to low; cover and cook till stock is absorbed and rice is tender, about 18 min. Let rice stand 5 min. Add in fresh herbs, stir to combine and serve.
