Receta Roast Pork With Port Jus And Chipotle Glazed Apples

Ingredientes
- 2 Tbsp. grnd cumin
- 2 tsp salt
- 2 tsp freshly-grnd black pepper
- 2 tsp chili pwdr
- 1/2 c. golden sugar - (packed) plus
- 1 Tbsp. golden sugar
- 3 lb boneless center-cut pork rib roast
- 3 c. ruby Port
- 1/4 c. minced shallots
- 1Â 3/4 c. beef stock or possibly canned beef broth
- 1Â 3/4 c. chicken stock
- Â Â (or possibly canned low-salt chicken broth)
- 1 x fresh thyme sprig
- 3 Tbsp. unsalted butter chilled, and
- Â Â cut into small pcs
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- Â Â Chipotle-Glazed Apples (see recipe)
Direcciones
- Mix first 4 ingredients and 1/2 c. brown sugar in small bowl. Rub spice mix over pork. Place in large glass baking dish. Cover and chill overnight.
- Preheat oven to 375 degrees. Transfer pork to large roasting pan. Reserve juices in glass dish. Roast pork till thermometer inserted into center registers 155 degrees, about 1 hour 45 min, basting with reserved juices from glass dish every 30 min.
- Meanwhile, combine Port, shallots and remaining 1 Tbsp. brown sugar in heavy medium saucepan. Boil till syrupy, about 25 min. Add in both stocks and thyme. Boil till reduced to 1 1/4 c., about 30 min. Strain sauce. Return to saucepan. Mix any pan drippings from pork into sauce (don't scrape roasting pan). Add in butter; whisk till melted. Season with salt and pepper.
- Cut pork into 1/4-inch-thick slices. Divide among 6 plates. Spoon Chipotle-Glazed Apples alongside, dividing equally. Spoon sauce over and around pork.
