%20I%20make%20over%20and%20over%20and%20over.%20I%20always%20have%20at%20least%202%20or%203%20individual%20containers%20of%20this%20soup%20in%20my%20freezer%20at%20all%20times,%20ready%20to%20go%20for%20a%20delicious%20homemade%20lunch.%3C/p%3E%3Cp%3EI%20am%20a%20big%20fan%20of%20thick%20and%20hearty%20tomato%20soups.%20The%20problem%20is%20-%20most%20of%20them%20are%20full%20of%20heavy%20cream.%20Why%20turn%20wonderful%20heart%20healthy%20tomatoes%20into%20something%20so%20horrible%20for%20you?%20Not%20only%20that%20-%20but%20being%20slightly%20lactose%20intolerant%20my%20stomach%20cannot%20handle%20heavy%20cream%20at%20all.%20This%20soup%20is%20the%20perfect%20answer%20-%20ripe%20tomatoes%20and%20lots%20of%20garlic%20roasted%20with%20rich%20balsamic%20vinegar%20then%20simply%20simmered%20with%20lots%20of%20basil%20and%20sauteed%20onions.%20Blend%20it%20all%20up%20and%20its%20a%20rich%20and%20delicious%20soup%20that%20I%20find%20myself%20craving%20all%20the%20time.%20Let%20the%20croutons%20sit%20at%20the%20bottom%20of%20your%20bowl%20and%20soak%20up%20all%20tomatoey%20goodness%20and%20they%20make%20a%20delicious%20addition.%3C/p%3E%3Cp%3EThis%20soup%20is%20great%20for%20late%20summer%20when%20the%20markets%20are%20full%20of%20cheap,%20fresh%20tomatoes%20and%20the%20weather%20is%20starting%20to%20remind%20us%20that%20fall%20is%20coming%20quickly.%3C/p%3E%3Cp%3EJust%20a%20few%20notes%20about%20the%20recipe:%20start%20with%20less%20water%20than%20it%20calls%20for%20to%20prevent%20from%20watering%20down%20your%20soup.%20Some%20tomatoes%20are%20more%20watery%20than%20others%20and%20I%20find%20I%20need%20different%20amounts%20of%20liquid%20every%20time%20I%20make%20this.%20I%20use%20exactly%20half%20the%20amount%20of%20Olive%20oil%20that%20he%20recommends%20(or%20even%20less%20-%20it%20definitely%20doesn't%20need%20that%20much!),%20and%20always%20make%20sure%20to%20use%20a%20really%20good%20rich%20balsamic%20-%20it%20makes%20a%20world%20of%20difference%20in%20the%20flavor%20of%20the%20soup.%20I%20sometimes%20add%20in%20a%20few%20other%20herbs%20with%20the%20basil%20(like%20rosemary%20and%20thyme)%20with%20pleasing%20results.%20When%20I%20make%20the%20croutons,%20I%20dip%20them%20in%20a%20mixture%20of%20olive%20oil%20and%20balsamic%20vinegar%20instead%20of%20just%20oil.%20And%20last%20but%20not%20least%20-%20the%20bit%20about%20using%20a%20non-reactive%20baking%20sheet%20is%20really%20important.%20Try%20to%20avoid%20using%20an%20aluminum%20pan%20when%20roasting%20the%20tomatoes%20as%20it%20can%20really%20add%20a%20metallic%20taste%20to%20the%20soup.%3C/p%3E%3Cp%3ERoasted%20Tomato%20Soup%3C/p%3E%3Cp%3Efrom%20Micheal%20Chiarello%3C/p%3E%3Cp%3EFor%20the%20soup:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20500%20degrees%20F%20(260%20C%20-%20my%20oven%20doesn't%20even%20go%20this%20hot!%20So%20I%20have%20to%20let%20them%20cook%20a%20bit%20longer).%3C/p%3E%3Cp%3EPrepare%20the%20tomatoes.%20In%20a%20large%20bowl,%20mix%20the%20tomatoes,%201/4%20cup%20of%20the%20oil%20(I%20just%20drizzle%20in%20to%20taste%20-%20not%20nearly%20that%20whole%20amount),%20the%20vinegar,%20garlic,%20salt,%20and%20pepper,%20to%20taste.%20Spread%20the%20tomatoes%20out%20on%20a%20non-reactive%20baking%20sheet%20(important%20or%20your%20tomatoes%20will%20taste%20like%20aluminum).%20Roast%20the%20tomatoes%20in%20the%20oven%20until%20very%20dark%20in%20spots,%2035%20to%2040%20minutes.%20Remove%20and%20allow%20to%20cool%20a%20bit.%3C/p%3E%3Cp%3EPrepare%20the%20bruschetta.%20Cut%20the%20bread%20crosswise%20into%20slices%20about%201-inch%20thick%20(you%20will%20need%208%20slices).%20Lightly%20brush%20the%20slices%20on%20both%20sides%20with%20oil%20and%20season%20with%20salt.%20Place%20the%20slices%20on%20a%20baking%20sheet%20and%20toast%20in%20the%20oven%20until%20the%20bruschetta%20are%20golden%20brown%20and%20just%20beginning%20to%20crisp,%20about%206%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan%20over%20medium%20heat,%20combine%20remaining%201/4%20cup%20oil,%20the%20onions,%20and%20a%20pinch%20of%20salt.%20Cook%20until%20the%20onions%20are%20very%20soft,%208%20to%2010%20minutes,%20stirring%20occasionally.%20Add%20the%202%20cups%20basil%20leaves%20and%20saute%20with%20the%20onions%20for%20about%201%20minute.%3C/p%3E%3Cp%3EAdd%20the%20roasted%20tomatoes%20and%20water%20to%20the%20saucepan.%20Bring%20the%20mixture%20to%20a%20simmer%20and%20cook%20for%2010%20minutes.%20Season%20with%20salt%20and%20pepper,%20to%20taste.%20Puree%20the%20tomato%20mixture%20in%20a%20blender.%20Start%20the%20motor%20at%20a%20slow%20speed%20and%20increase%20gradually.%20Alternatively%20you%20can%20use%20an%20immersion%20blender%20right%20in%20the%20pot.%20The%20mixture%20should%20be%20very%20smooth.%20You%20should%20have%20about%208%20cups.%20You%20can%20prepare%20the%20soup%20to%20this%20point%20and%20refrigerate%20it.%20When%20ready%20to%20serve,%20pour%20the%20soup%20into%20a%20medium%20saucepan%20and%20bring%20it%20to%20a%20slow%20simmer%20over%20medium%20heat.%3C/p%3
