- 3 cups sugar
- 3/4 cup butter
- 1 cup heavy cream
- pinch of salt
- 3 cups white chocolate, coarsely chopped or white chocolate chips/morsels**
- 1 1/2 cups marshmallow cream
- 3 teaspoons root beer concentrate

%20and%20for%20this%20recipe%20I%20used%202%20lbs.%20worth%20of%20Callebaut%20chips%20and%20Callebaut%20curls%20to%20equal%20the%203%20cups%20needed.%20%20(Since%20I%20didn't%20have%20enough%20chips%20I%20added%20in%20the%20curls%20which%20I%20had%20purchased%20to%20use%20as%20a%20decoration%20on%20a%20cake%20that%20never%20got%20made!)%20%20I%20purchased%20Callebaut%20from%20The%20Chocolate%20Man%20in%20Lake%20Forest%20Park,%20WA.%20%20You%20can%20also%20find%20this%20chocolate%20on-line%20or%20in%20specialty%20stores.%20%20There%20is%20such%20a%20difference%20in%20taste%20that%20I%20thought%20it%20was%20worth%20the%20price...but%20that's%20just%20because%20I%20have%20no%20problem%20eating%20expensive%20fudge%20when%20I'm%20a%20diabetic%20%20on%20the%20way%20to%20the%20poor%20house.%20%20That's%20the%20kind%20of%20gal%20I%20am!)%3C/p%3E%3Cp%3EIf%20you%20are%20using%20a%20block%20of%20white%20chocolate,%20have%20it%20chopped%20and%20ready%20to%20go%20before%20you%20begin%20making%20the%20fudge.%20%20Line%20a%209x13-inch%20baking%20dish%20with%20parchment%20or%20waxed%20paper,%20allowing%20to%20hang%20over%20sides.%20%20In%20a%20large%20saucepan%20over%20medium-heat,%20combine%20sugar,%20butter,%20salt%20and%20cream.%20%20Bring%20to%20a%20boil%20and%20stir%20continuously%20for%204%20minutes.%20%20Remove%20from%20heat%20and%20quickly%20stir%20in%20chocolate%20pieces%20and%20marshmallow%20cream.%20%20Using%20a%20wooden%20spoon,%20stir%20vigorously%20until%20smooth%20and%20the%20chocolate%20is%20melted%20and%20there%20are%20no%20streaks.%20%20Pour%20half%20of%20this%20mixture%20into%20parchment-lined%20pan.%3C/p%3E%3Cp%3EWorking%20quickly,%20add%20root%20beer%20concentrate%20to%20the%20remaining%20fudge%20in%20the%20pan.%20%20Stir%20until%20combined%20and%20there%20are%20not%20streaks.%20%20Pour%20the%20root%20beer%20fudge%20over%20the%20white%20fudge.%20%20Use%20an%20off-set%20knife%20to%20smooth%20fudge%20over%20the%20top.%20%20I%20liked%20having%20the%20two%20distinct%20layers%20but%20if%20you%20want%20you%20can%20use%20a%20knife%20to%20swirl%20them%20together.%20%20Refrigerate%20for%204%20hours.%20%20To%20cut,%20lift%20fudge%20out%20of%20the%20pan%20using%20the%20parchment.%20%20Cut%20into%20bite-sized%20pieces.%20%20Makes%20about%2080%20pieces%20of%20fudge,%20depending%20on%20what%20size%20you%20cut%20them.%3C/p%3E){kind=link}
