Receta Rustic Parsnip Cakes w/ Mascarpone Maple Icing for my 50th

Ingredientes
- Little Rustic Parsnip Cakes: (adapted from Epicurious)
- 3 parsnips, grated (2 packed cups)
- 3 eggs
- 1 cup sugar
- 1/2 cup walnuts, chopped
- 1/2 cup sunflower or vegetable oil
- 1/2 cup whole milk
- 1 tsp vanilla
- 1 1/2 cup flour
- pinch of salt
- 2 tsp baking powder
- 1/4 tsp ground cloves
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup golden raisins
- 4 oz. of mascarpone (mascarpone is an Italian cream cheese)
- 1/4 cup of maple syrup
- 2 tbsp softened butter
- 1/4 cup of confectioners sugar

.%20My%20mother%20never%20bought%20them.%3C/p%3E%3Cp%3EIn%20the%20winter%20months%20I%20love%20roasted%20root%20vegetables,%20parsnips%20being%20numero%20uno.%3C/p%3E%3Cp%3EJust%20peeling%20this%20ugly%20beige%20carrot%20evokes%20such%20sensory%20pleasures.%3C/p%3E%3Cp%3ETHEY%20SMELL%20SO%20GOOD!%20Like%20cloves%20or%20some%20kind%20of%20spicy%20carrot.%3C/p%3E%3Cp%3EAnyone%20who%20knows%20me%20(and%20loves%20me),%20knows%20that%20I%20have%20a%20fondness%20for%20carrot%20cake.%3C/p%3E%3Cp%3EIt%20is%20my%20go-to%20birthday%20cake,%20baked%20by%20my%20friend%20Sally%20every%20year%20on%20my%20birthday.%20No%20pineapple%20or%20coconut%20please,%20but%20yes%20to%20raisins%20and%20walnuts.%3C/p%3E%3Cp%3EWell,%20tonight,%20I%20am%20getting%20that%20Lady%20Baltimore%20Cake%20that%20I%20asked%20for%20instead!%20She%20is%20baking%20it%20for%20my%20birthday%20dinner.%20:)%3C/p%3E%3Cp%3EBut%20to%20honor%20the%20beloved%20carrot%20birthday%20cake,%20I%20made%20a%20close%20cousin.%3C/p%3E%3Cp%3EA%20delicious%20PARSNIP%20CAKE!%3C/p%3E%3Cp%3EThe%20only%20tedious%20thing%20about%20this%20recipe%20is%20the%20grating%20of%20the%20parsnips%20on%20a%20box%20grater.%20Watch%20those%20knuckles.%3C/p%3E%3Cp%3EI%20baked%20them%20in%20these%20cute%20little%20muffin%20cups%20and%20frosted%20them%20with%20a%20mascarpone%20icing.%3C/p%3E%3Cp%3EI'm%20a%20terrible%20cake%20froster,%20so%20I%20am%20calling%20them%20%22rustic%22.%3C/p%3E%3Cp%3EMix%20dry%20ingredients%20in%20a%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EMix%20grated%20parsnips%20with%20eggs,%20sugar,%20oil%20and%20vanilla.%20Gradually%20add%20in%20the%20dry%20ingredients%20and%20add%20in%20nuts%20last.%3C/p%3E%3Cp%3EYou%20can%20make%20one%20big%20cake%20in%20an%209%22%20x%2011%22%20greased%20pan,%20or%20muffins.......%3C/p%3E%3Cp%3EI%20opted%20for%2012%20muffins%20and%20they%20were%20great.%3C/p%3E%3Cp%3EBaking%20time%20was%2030%20minutes%20for%20muffins,%20and%20I%20imagine%20a%20cake%20would%20take%205%20minutes%20more.%3C/p%3E%3Cp%3ELet%20cool%20completely%20before%20icing%20them.%3C/p%3E%3Cp%3EYou%20can%20dust%20with%20powdered%20sugar%20or%20make%20a%20frosting.%3C/p%3E%3Cp%3EMAS-carpone%20(NOT%20MAR-scapone!)%20Icing:%3C/p%3E%3Cp%3E4%20oz.%20of%20mascarpone%20(mascarpone%20is%20an%20Italian%20cream%20cheese)%3C/p%3E%3Cp%3E1/4%20cup%20of%20maple%20syrup%3C/p%3E%3Cp%3E2%20tbsp%20softened%20butter%3C/p%3E%3Cp%3E1/4%20cup%20of%20confectioners%20sugar%3C/p%3E%3Cp%3EMix%20ingredients%20until%20nice%20and%20smooth%20and%20spread%20the%20icing%20over%20the%20cooled%20muffins%20or%20cake.%3C/p%3E%3Cp%3EI%20am%20sharing%20them%20with%20my%20friends%20to%20celebrate%20my%20big%20day.%3C/p%3E%3Cp%3EHave%20a%20very%20Merry%20Christmas!%20See%20you%20after%20the%20holidays.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3Exo%3C/p%3E){kind=link}
