Receta Rustic Parsnip Cakes w/ Mascarpone Maple Icing for my 50th
Ingredientes
- Little Rustic Parsnip Cakes: (adapted from Epicurious)
- 3 parsnips, grated (2 packed cups)
- 3 eggs
- 1 cup sugar
- 1/2 cup walnuts, chopped
- 1/2 cup sunflower or vegetable oil
- 1/2 cup whole milk
- 1 tsp vanilla
- 1 1/2 cup flour
- pinch of salt
- 2 tsp baking powder
- 1/4 tsp ground cloves
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup golden raisins
- 4 oz. of mascarpone (mascarpone is an Italian cream cheese)
- 1/4 cup of maple syrup
- 2 tbsp softened butter
- 1/4 cup of confectioners sugar
