Receta Saffron Rice With Clams

Ingredientes
- Â Â Large healthy pinch saffron threads
- 3 Tbsp. warm water
- 2 c. medium- or possibly long-grain white rice
- 2 x ripe tomatoes, cut into chunks, Or possibly 1 can minced tomatoes, liquid removed
- 1/4 c. minced white onion
- 2 tsp minced garlic (about 6 small cloves)
- 1/3 c. safflower or possibly canola oil
- 3 c. hot water
- 2 lb small clams, well-scrubbed
- 4 x fresh flat-leaf (Italian) parsley sprigs, minced
- 2 tsp sea salt

- In a small bowl, soak saffron threads in the 3 Tbsp. of warm water for 10 min. In a medium bowl, soak rice in hot water to cover for 10 min.
- Drain rice and rinse under cool running water till water runs clear. Drain thoroughly. Put tomatoes in blender. Add in onion, garlic, and saffron with its soaking water. Process till smooth.
- In a heavy saucepan over medium heat, hot oil. Stir in rice and saute/fry till golden brown, about 5 min. Pour tomato mix through a sieve placed over saucepan. Simmer, stirring occasionally, to combine flavors, 6-8 min. Put 3 c. hot water into un-rinsed blender, swirl it around, and add in to rice. Bring to a boil, and add in clams (throw away any which don't close to the touch), parsley and salt. Stir once, cover, and simmer over low heat till rice is fluffy and clams have opened, 20-25 min.
- Spoon rice and clams into wide, shallow serving bowl or possibly into individual plates with rims, discarding any clams which failed to open. Serve at once.
