Receta Salt Rising Bread

Ingredientes
- 2 Irish potatoes
- 3 tbsp. white sugar
- 1 healthy pinch baking soda
- 2 c. boiling water
- 3 tbsp. corn meal

- Use sufficient all purpose flour to suit mix. The day before baking the bread, at noon place into a qt jar, 2 Irish potatoes sliced thin, 3 Tbsp. sugar, 2 Tbsp. corn meal, 1 healthy pinch of baking soda. Add in 2 c. of boiling water. Cover with plastic cover and set in a very hot place overnight.
- The next morning a foam should have raised to the top of the jar. Pour a c. of the liquid only from the jar into a bowl. Add in 3 Tbsp. sugar, a healthy pinch of soda, 1 pint sweet lowfat milk. add in sufficient flour to make the batch similiar to a paste. Place in a hot place till double in size. Add in shortening to a mix of salt and flour a little at a time. Knead till similiar to other breads. Put in greased pan about half full and let raise to top of the pans. Bake in 375 degree oven for 45 to 50 min.
