- 1 lb (2 cups) sugar
- 4 oz (1/2 cup) water
- 12 oz (1 cup) light corn syrup
- 4 oz (1 cup) cacao nibs
- 1 t fine sea salt
- 1 oz (2 T) unsalted butter, softened
- 2 t vanilla
- 1 1/2 t baking soda
- coarse grey sea salt for sprinkling

%20free.%20%20I%20served%20it%20at%20Sammy%E2%80%99s%20birthday%20party,%20and%20one%20mom%20told%20me%20it%20was%20the%20first%20time%20her%20son%20had%20gotten%20to%20try%20brittle%20as%20he%20is%20allergic%20to%20nuts.%3C/p%3E%3Cp%3EThis%20brittle,%20as%20with%20most%20brittles,%20is%20super%20easy%20as%20long%20as%20you%20have%20a%20thermometer.%20%20The%20only%20tricky%20part%20is%20spreading%20it%20quickly,%20because,%20as%20you%20can%20see%20above,%20it%20will%20start%20hardening%20into%20strands%20pretty%20fast.%20%20I%20like%20thin%20brittle,%20so%20I%20pour%20the%20brittle%20onto%20parchment%20paper%20in%20a%20half%20sheet%20pan%20(but%20the%20parchment%20itself%20is%20larger%20than%20the%20half%20sheet%20pan)%E2%80%93once%20it%20has%20hardened%20enough%20to%20not%20spread%20all%20over%20the%20place%20(a%20matter%20of%20moments),%20I%20slide%20the%20parchment%20off%20of%20the%20half%20sheet%20and%20use%20an%20oiled%20offset%20spatula%20to%20spread%20it%20to%20the%20end%20of%20the%20parchment%20paper%20(which%20is%20larger%20than%20the%20half%20sheet%20pan,%20allowing%20me%20to%20get%20the%20brittle%20thinner).%20%20If%20you%20don%E2%80%99t%20mind%20your%20brittle%20thicker,%20just%20spread%20it%20inside%20the%20pan.%3C/p%3E%3Cp%3EA%20note%20about%20the%20%E2%80%9CSalted:%E2%80%9D%20I%20like%20my%20brittle%20just%20a%20little%20salty%20to%20temper%20the%20sweetness.%20%20If%20this%20bothers%20you,%20just%20omit%20the%20salt%20on%20top%20of%20the%20brittle,%20but%20do%20include%20the%20teaspoon%20of%20fine%20sea%20salt%20in%20the%20brittle.%3C/p%3E%3Cp%3ESalted%20Cacao%20Nib%20Brittle%3C/p%3E%3Cp%3EPlace%20a%20piece%20of%20parchment%20paper%20larger%20than%20the%20pan%20over%20a%20half%20sheet%20baking%20pan%20(see%20notes%20above).%20%20Lightly%20oil%20an%20offset%20spatula/palette%20knife.%3C/p%3E%3Cp%3ECombine%20the%20sugar,%20water%20and%20corn%20syrup%20in%20a%204%20qt%20heavy%20sauce%20pan.%20%20bring%20to%20a%20boil,%20stirring%20constantly%20with%20a%20heat-proof%20rubber%20spatula%20or%20wooden%20spoon.%20%20When%20it%20boils,%20reduce%20the%20heat%20to%20medium%20and%20cover%20for%204%20minutes.%3C/p%3E%3Cp%3EAfter%20the%204minutes,%20remove%20the%20lid%20and%20insert%20a%20candy%20thermometer%20into%20the%20sugar.%20%20Do%20not%20stir.%20%20Let%20it%20boil%20and%20cook%20until%20it%20reaches%20a%20temperature%20of%20240%20F.%20%20Add%20the%20cacao%20nibs%20at%20this%20point%20and%20cook,%20stirring%20constantly,%20until%20the%20temperature%20reaches%20320.%20%20The%20color%20at%20this%20point%20will%20be%20light%20amber.%3C/p%3E%3Cp%3EAt%20320%20F,%20remove%20the%20pot%20from%20the%20heat.%20%20Stir%20in%20the%20butter,%20salt,%20vanilla%20and%20baking%20soda.%20%20Working%20quickly%20but%20carefully,%20pour%20the%20brittle%20onto%20your%20prepared%20pan.%20%20Spread%20it%20some%20with%20the%20oiled%20knife.%20%20Within%20moments%20it%20will%20slow%20to%20sludge.%20%20At%20that%20point,%20remove%20the%20parchment%20from%20the%20pan%20so%20that%20you%20can%20spread%20the%20brittle%20out%20even%20further.%20%20When%20it%20starts%20to%20resist%20and%20get%20sticky%20and%20stringy%20at%20the%20edges,%20stop%20and%20sprinkle%20with%20coarse%20grey%20sea%20salt%20(to%20taste%E2%80%93it%E2%80%99s%20optional).%20%20Let%20cool%20completely%20before%20breaking%20into%20irregular%20pieces.%3C/p%3E){kind=link}
