Receta Santa Fe Chicken Salad Clone

Ingredientes
- 3 Tbsp. lime juice
- 1/4 c. vinegar
- 2 Tbsp. cilantro leaves
- 1 tsp salt
- 2 tsp sugar
- 1Â 1/2 tsp grnd cumin
- 1Â 1/2 tsp peanut butter
- 1/3 c. extra virgin olive oil
- Â Â Place first 6 ingredients in a blender and chop till cilantro is finely
- Â Â minced. Add in oil while blender is running. Set dressing aside.
- 1 head Romaine lettuce, shredded
- 1/2 head iceberg lettuce, shredded
- 2 x ears of corn, cooked and cut off cob or possibly 1 C. frzn corn, defrosted
- 1 x (15 1/2 ounce.) can black beans, liquid removed and rinsed
- 1/2 c. shredded carrot
- 2 x green onions sliced
- 1/2 c. diced tomato or possibly grape tomatoes left whole
- 2 c. shredded Jack cheese
- 2 x chicken breast halves cooked and shredded (grilled is good)
Direcciones
- Corn chips or possibly wonton wrappers, shredded and fried until crisp
- Mix first nine ingredients in salad bowl. Add in dressing and mix well.
- Garnish with broken corn chips.
