  1. Wash and rinse 1 lb. lentils. Add in water to lentils in large pot. Add in onion, sausage, marjoram, bay leaf and pepper. Cover and bring to a boil. Simmer 2 hrs, stirring occasionally. Remove from heat. Cut sausage into 1/4 inch slices. Add in carrots, celery, potatoes, and parsley. Cover and simmer 1 more hour, stirring frequently. Season to taste.
