Receta Saute Shrimp and Pasta
A quick and easy, versatile shrimp dish. You can also use lemon and dill if that is your preference. Pair with hot bread (for soaking up the juice) and a salad for a lovely dinner. We use whole wheat/whole grain pasta and whole grain breads for a lower carb meal. Garnish with lime wedges and/or grape tomatoes to add color. A few sprinkles of fresh grated Parmesan Cheese is nice also.
Ingredientes
- 1bunch of fresh cilantro, washed
- 1-2 limes, squeeze for juice and scrape for lime peel
- Salt and Pepper to taste
- 1-2 Tablespoons Olive Oil
- 1-2 pounds of shrimp, cleaned
- Angel Hair Pasta - prepared as directed
- lime wedges - optional
- grape tomatoes - optional
- Parmesan Cheese (fresh grated)
Direcciones
- In a food processor place cilantro, lime juice, and lime peel. Process until well blended. Add a touch of olive oil if needed.
- In a large bowl place cleaned shrimp, pour cilantro mix and toss gently to coat shrimp. Let it stand about 15 minutes.
- In a large pan place olive oil. Cover the bottom of the pan with shrimp, do not overcrowd (may require cooking in batches). Gently stir shrimp while cooking. Shrimp is done when it is pink and tender.
- Serve over hot cooked Angel Hair pasta and serve immediately. Top with grape tomatoes and parmesan cheese. Add the lime wedge on the side.
