Bangus or milkfish is the national fish in the Philippines. There are a lot of ways to cook bangus. Today, I will share with you sauteed bangus. Try it and you'll eat it with much gusto.

  • 1 kilo milkfish cut into butterfly fillet
  • 1 tbsp salt
  • 2 tsp calamansi or lemon juice
  • dash of white pepper
  • 1/2 tsp white sugar
  • 2 to 3 cloves garlic
  • 1 sliced onion
  • 1 ripe tomato sliced
  • Chicken longganisa(sausage) sauce:
  • 4 tbsp all-purpose flour
  • 4 tbsp butter
  • 2 cups water
  • 2 pcs chicken longganisa cut into small lengthwise
  • salt and pepper to taste

Direcciones

  1. Marinate fish in salt, pepper, sugar and lemon juice for 1 hour.Set aside.
  2. In a skillet, saute onion, garlic and tomato until wilted and push to one side and fry the marinated fish until brown. Set aside.
  3. Prepare longganisa sauce.
  4. Stir all-purpose flour with water until the mixture is smooth.
  5. In another skillet, fry the chicken longganisa in butter and pour the flour mixture.
  6. Season with salt and pepper and pour over fried fish. Arrange the sauteed garlic-tomato-onion mixture over the fish and serve hot.
