- 1 medium eggplant, peeled and cut in 1/2-inch cubes
- 3 medium hoagie rolls, cut in 1-inch cubes
- 1/4 cup sliced cherry or grape tomatoes
- 1 tbs dehydrated onion
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp garlic powder
- 1 cup shredded cheddar cheese
- 1 1/2 cups milk
- 3 eggs
- 2 tbs butter, melted
