Receta Scalloped Tomatoes
Ingredientes
- 2 1/2 lbs ripe tomatoes cut into large dice
- 3 garlic cloves minced
- 2 tbsp sugar
- 2 tsp salt
- 6 tbsp olive oil
- 2 generous cups bread cubes from country loaf
- 1/2 cup julienned fresh basil leaves
- 1 tsp pepper
- 1/8 tsp cayenne pepper
- 1 cup parmesan cheese
Direcciones
- preheat oven to 350
- combine the tomatoes, garlic sugar and salt in a bowl. set aside
- heat 4 tbsp of the oil in a large saute pan when it starts to shimmer. add the bread cubes, stir and toast, stirring freuently to make sure they cook evenly. until they start to get browned. about 5 minutes.
- turn the heat down, add the tonmatoes and cook stirring frequently for about 5 more mninutes. turn off the heat and stir in the basil and black pepper and cayenne pepper. Spread the mixture in a shallow baking dish and sprinkle with the cheese. drizzle with the remaiing olive oil and bake for 40 minutes or until top browns nicely and tomatoes are bubbling
