- 1 small onion, cut into small dices
- 3 cloves garlic, sliced
- 2 bell peppers, cut into small dices
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne
- 1 tablespoon tomato paste
- 1/2 teaspoon salt
- 28 ounces diced tomatoes, or 2 pounds fresh
