  • 3 whl bay leaves
  • 2 tsp Salt
  • 1 1/2 tsp Dry mustard
  • 1 1/4 tsp White pepper
  • 1 tsp Cayenne pepper
  • 1 tsp Dry thyme leaves
  • 1/2 tsp Black pepper
  • 1/2 tsp Dry sweet basil leaves
  • 1/4 c. Plus
  • 2 Tbsp. Veg oil *in*all*
  • 3/4 lb Okra, sliced 1/4 inch thick (3 c. sliced), *in*all*
  • 3/4 c. Finely minced onions
  • 3/4 c. Finely minced green bell peppers
  • 3/4 c. Finely minced celery
  • 4 Tbsp. Unsalted butter
  • 2 tsp Chopped garlic
  • 1/4 c. All-purpose flour
  • 5 1/2 c. , *in*all*, seafood stock
  • 1/2 c. Finely minced green onions
  • 3 doz peeled medium shrimp, abt. 3/4 lb.

Direcciones

  1. Combine the seasoning mix ingredients in a small bowl and set aside.
  2. In a 4-quart. saucepan, heat 1/4 c. of the oil over high heat for 1 minute.
  3. Stir in 2 c. of the okra; cook till browned, abt. 6 min, stirring occasionally. Stir in the onions, bell peppers, and celery and cook 1 minute. Add in the butter and cook 1 minute; then stir in the garlic and cook 1 minute more. Add in the seasoning mix and stir well; continue cooking over high heat for 3 min, stirring frequently and scraping pan bottom well.
  4. Add in the remaining 2 TBSP oil and the flour; stir and scrape the pan bottom well.
  5. Continue cooking till well browned, stirring frequently, abt. 2 min.
  6. Stir in 1 1/2 c. of the seafood stock and scrape the pan bottom well; then add in 4 c. more stock and stir well. Bring to a boil, stirring often.
  7. Boil 2 min, then lower the heat and simmer 5 min, stirring occasionally. Stir in the remaining c. okra. Continue simmering 10 min, stirring occassionally. Add in the green onions and simmer 3 min.
  8. Remove from heat. Add in the shrimp [crawfish -rael-], turn heat to medium, and simmer just till shrimp turn pink, abt. 1 minute. Serve immediately, allowing abt. 3/4 c. for each searving.
