Ingredientes

  • 1 lb Sausage (sweet and warm), casing removed
  • 1 x Onion, finely minced
  • 3 x Carrots, peeled and minced
  • 2 piece celery, minced small
  •     Handful minced parsley
  • 1 tsp Dry sweet basil
  • 1/2 c. Orzo, (soupettes)
  • 2 can Italian style peeled tomatoes, (16 ounce.) break up with a fork
  • 1 can Chicken broth salt and pepper to taste, (28 ounce.)

Direcciones

  1. Break up sausage in small pcs and brown in medium skillet in a little extra virgin olive oil. Remove from skillet with slotted spoon and place in large saucepan (set aside). Saute/fry the onion in sausage drippings till tender.
  2. Remove onion and add in with sausage. Break up tomatoes and add in to sausage.
  3. Add in vegetables, chicken broth, basil to sausage mix. Bring to a boil; cook over moderate heat for 15 min. Reduce heat to low simmer for 45 min. In separate pot, cook orzo till almost done. Drain water from orzo and add in to sausage mix. Simmer for additional 10 min.
