Receta Small Batch Vanilla Cupcakes with Fresh Strawberry Buttercream

Ingredientes
- 1 cup all-purpose flour
- a scant 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 3 tablespoons unsalted butter, at room temperature
- 1/2 cup whole milk
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup of strawberries, washed and cut into fourths
- 5 tablespoons butter, at room temperature
- 4 cups powdered sugar (more of less depending on the thickness you desire)

%20birthday%20and%20if%20made%20me%20a%20cake%20for%20my%20birthday%20so%20of%20course%20he%20would%20get%20a%20cake%20back!%20%20Sunday%20while%20watching%20Life%20Kate,%20thankfully,%20reminded%20me%20of%20Cory's%20birthday.%20%20I%20immediately%20sprung%20over%20to%20the%20kitchen%20and%20began%20whipping%20up%20a%20small%20batch%20of%20cupcakes.%20%20I%20have%20a%20%22stand-by%22%20vanilla%20cake%20recipe,%20but%20I%20wanted%20to%20try%20something%20new%E2%80%A6%20and%20I%20didn't%20want%20to%20have%20to%20figure%20out%20how%20much%20I%20would%20have%20to%20reduce%20my%20cake%20recipe%20to%20make%2012%20cupcakes.%20%20I%20decided%20to%20try%20out%20the%20fabulous%20Joy%20the%20Baker's%20recipe%20-%20and%20it%20was%20already%20formatted%20for%2012%20cupcakes!%20%20Lucky%20me!%3C/p%3E%3Cp%3EBut%20I%20didn't%20want%20to%20use%20any%20old%20buttercream%20recipe.%20%20Lately%20I%20have%20really%20gotten%20into%20experimenting%20with%20different%20buttercream%20flavors%20-%20in%20particular%20ones%20with%20fresh%20fruit.%20%20After%20quizzing%20Cory%20on%20what%20kinds%20of%20fruit%20he%20likes,%20we%20landed%20on%20strawberry.%20%20I%20might%20like%20to%20note%20that%20at%20this%20point%20I%20don't%20think%20Cory%20knew%20he%20was%20getting%20cupcakes.%20%20I%20must%20say%E2%80%A6%20this%20is%20probably%20one%20of%20my%20favorite%20buttercream's%20I%20have%20EVER%20made.%20%20It%20tasted%20light%20and%20the%20sweetness%20came%20mainly%20from%20the%20strawberries.%20(note:%20I%20made%20mine%20a%20lot%20thinner%20because%20I%20wanted%20it%20to%20look%20like%20a%20%22drippy%22%20glaze,%20but%20it'll%20easily%20thicken%20up%20with%20more%20powdered%20sugar)%3C/p%3E%3Cp%3EThe%20next%20day%20Kate%20and%20Zenka%20brought%20the%20cupcakes%20up%20to%20North%20Campus%20and%20the%20text%20I%20received%20a%20few%20hours%20later%20confirmed%20my%20suspicion%20-%20Cory%20LOVED%20the%20cupcakes!%3C/p%3E%3Cp%3EVanilla%20Cupcakes%20with%20Fresh%20Strawberry%20Buttercream%3C/p%3E%3Cp%3Eadapted%20from%20Joy%20the%20Baker%3C/p%3E%3Cp%3Emakes%2012%20cupcakes%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EPut%20the%20flour,%20sugar,%20baking%20powder,%20baking%20soda%20and%20butter%20into%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20a%20paddle%20attachment,%20or%20use%20a%20handheld%20beater%20and%20beat%20on%20slow%20speed%20until%20the%20mixture%20is%20a%20sandy%20consistency%20and%20everything%20is%20combined.%20%20Gradually%20pour%20in%20half%20of%20the%20milk%20and%20beat%20until%20the%20milk%20is%20just%20incorporated.%3C/p%3E%3Cp%3EWhisk%20the%20egg,%20vanilla%20and%20remaining%20milk%20together%20in%20a%20separate%20bowl%20for%20a%20few%20seconds,%20then%20pour%20into%20the%20flour%20mixture%20and%20continue%20beating%20until%20just%20incorporated.%20%20Scrape%20any%20unmixed%20ingredients%20from%20the%20side%20or%20the%20bottom%20of%20the%20bowl%20with%20a%20rubber%20spatula.%20%20Continue%20mixing%20until%20the%20batter%20is%20smooth.%20%20Just%20a%20few%20minutes.%20%20Do%20not%20overmix.%3C/p%3E%3Cp%3ESpoon%20the%20batter%20into%20paper%20lined%20muffin%20tins,%20dividing%20between%20the%2012%20cups.%20%20Bake%20for%2020-25%20minutes%20or%20until%20light%20golden%20and%20a%20skewer%20inserted%20in%20the%20center%20comes%20out%20clean.%20%20Let%20the%20cupcakes%20cool%20slightly%20in%20the%20pan,%20then%20turn%20them%20out%20onto%20a%20wire%20rack%20to%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EFresh%20Strawberry%20Buttercream%3C/p%3E%3Cp%3E1%20cup%20of%20strawberries,%20washed%20and%20cut%20into%20fourths%3C/p%3E%3Cp%3E5%20tablespoons%20butter,%20at%20room%20temperature%3C/p%3E%3Cp%3E4%20cups%20powdered%20sugar%20(more%20of%20less%20depending%20on%20the%20thickness%20you%20desire)%3C/p%3E%3Cp%3EBeat%20butter%20with%20a%20hand%20mixer%20until%20fluffy,%20set%20aside.%3C/p%3E%3Cp%3EPuree%20strawberries%20in%20a%20food%20processor,%20beat%20into%20butter%20until%20well%20combined.%3C/p%3E%3Cp%3EBeat%20in%20powered%20sugar%20%C2%BC%20of%20a%20cup%20at%20a%20time.%20%20When%20desired%20consistency%20is%20reached,%20begin%20frosting%20cooled%20cupcakes.%3C/p%3E){kind=link}
