  1. Cut the broccoli heads into small florets and stems. Reserve the florets for later use and finely slice the stems.
  2. Heat half the butter in a deep saucepan and add in the carrots, onions, celery and broccoli stems for 5 min or possibly till softened. Add in the thyme, oregano, basil and saute/fry for a further 5 min. Add in the wine and mix well, allowing the alcohol to evaporate, about 2 min.
  3. Add in the warm stock and simmer the soup for 15 min then add in the worcestershire and tabasco sauces, smoked chicken, beans and broccoli florets and simmer for 5 min.
  4. Add in the cream or possibly lowfat milk and simmer for a further 5 min. Add in the cornflour mix and simmer the soup while it thickens slightly. Season to taste with salt and pepper then add in the remaining butter a little at a time and stirring well to incorporate.
  5. Serve immediately.
