- 1 tsp smoked paprika
- 1 tsp lemon pepper
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp celery salt
- 1/2 tsp dry mustard
- 2 tsp brown sugar
- 2 tsp Herbes de Provence

%20and%20it%20was%20done%20in%20just%20over%202%20hours.%20It%20was%20tender%20and%20very%20juicy,%20but%20not%20as%20smoky%20as%20we%20would%20like.%20Next%20time%20we%E2%80%99ll%20try%20a%20slower%20fire%20and%204%20hours.%3C/p%3E%3Cp%3EThe%20instructions%20assume%20you%20have%20a%20smoker.%20Ours%20in%20an%20inexpensive%20smoker%20we%E2%80%99ve%20had%20for%20years%20%E2%80%93%20bought%20at%20Target.%3C/p%3E%3Cp%3ESmoked%20Whole%20Chicken%20With%20Spice%20Rub%3C/p%3E%3Cp%3ETotal%20time:%204%20hours%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3ELight%20a%20fire%20in%20the%20smoker%20and%20put%20water%20in%20the%20pan.%3C/p%3E%3Cp%3EMix%20all%20the%20ingredients,%20except%20chicken.%3C/p%3E%3Cp%3ELoosen%20the%20skin%20on%20the%20chicken%20and%20put%20some%20of%20the%20spice%20rub%20under%20it.%3C/p%3E%3Cp%3ERub%20the%20remaining%20spice%20all%20over%20the%20chicken.%20%20If%20there%20is%20any%20left,%20put%20it%20inside.%3C/p%3E%3Cp%3EPut%20the%20chicken,%20breast%20side%20down,%20in%20the%20smoker,%20cover%20and%20cook.%3C/p%3E%3Cp%3EHalfway%20through%20cooking%20time%20turn%20chicken%20over%20and%20insert%20meat%20thermometer%20(remote%20read)%3C/p%3E%3Cp%3EStoke%20fire%20as%20needed%20and%20continue%20to%20cook%20until%20done.%3C/p%3E%3Cp%3ERemove%20and%20let%20rest%20for%2010%20%E2%80%93%2015%20minutes%20before%20carving.%3C/p%3E%3Cp%3EI%20continue%20to%20struggle%20with%20the%20jungle%20that%20is%20now%20my%20potager.%3C/p%3E%3Cp%3EThis%20is%20what%20my%20potager%20looked%20like%20last%20summer%20at%20this%20time:%3C/p%3E%3Cp%3EThe%20sweet%20corn%20was%20thigh-high,%20the%20beans%20were%20just%20starting%20to%20climb,%20the%20summer%20squashes%20were%20barely%20producing%20and%20the%20butternut%20squash%20just%20starting%20to%20vine.%3C/p%3E%3Cp%3EIt%20was%20neat%20and%20tidy.%3C/p%3E%3Cp%3EThis%20is%20what%20it%20looks%20like%20today.%3C/p%3E%3Cp%3EThe%20sweet%20corn%20is%20over%20my%20head,%20the%20beans%20grab%20my%20neck%20whenever%20I%20get%20close,%20and%20the%20squashes,%20both%20summer%20and%20winter%20are%20climbing%20over,%20under%20and%20through%20the%20fence.%3C/p%3E%3Cp%3EI%20took%20the%20secateurs%20to%20the%20lot%20today%20and%20trimmed%20it%20all%20back.%3C/p%3E%3Cp%3EUnlike%20my%20mother,%20who%20was%20always%20very%20proud%20of%20her%20flowers%20(and%20justifiably%20so)%20I%20have%20never%20had%20a%20strong%20interest%20in%20growing%20things%20I%20couldn%E2%80%99t%20eat.%20The%20rest%20of%20the%20women%20in%20my%20family%20all%20have%20beautiful%20flower%20beds.%3C/p%3E%3Cp%3EI%20grow%20food.%3C/p%3E%3Cp%3EMon%20mari,%20however,%20has%20stepped%20into%20the%20void.%3C/p%3E%3Cp%3EHe%20likes%20geraniums.%3C/p%3E%3Cp%3EThe%20old%20well%20you%20see%20below,%20as%20well%20as%20every%20window%20in%20our%20house,%20is%20filled%20with%20geraniums%20of%20every%20color.%3C/p%3E%3Cp%3EAnd%20this%20is%20his%20geranium%20nursery%E2%80%A6..%20All%20of%20the%20babies%20he%20has%20started%20from%20cuttings.%3C/p%3E%3Cp%3EIt%E2%80%99s%20a%20good%20growing%20year%20here.%3C/p%3E%3Cp%3ELast%20update%20on%20July%2021,%202014%3C/p%3E){kind=link}
