- cinnamon sugar for sprinkling (whatever ratio of cinnamon to sugar you like)

%3C/p%3E%3Cp%3EFor%20example,%20right%20after%20the%20candied%20bacon,%20I%20gave%20you%20pickles%20(and%20no,%20there's%20nothing%20I%20want%20to%20tell%20you,%20trust%20me)%20and%20spring%20greens%20soup.%3C/p%3E%3Cp%3ELovely%20veggies,%20no%20butter.%3C/p%3E%3Cp%3ECall%20it%20a%20yin-yang,%20angel-devil,%20white%20hat-black%20hat,%20Hall-Oates%20kind%20of%20thing%20...%20I'm%20trying%20to%20keep%20it%20balanced.%3C/p%3E%3Cp%3EEvery%20once%20in%20a%20while%20I%20get%20really,%20really%20lucky%20and%20end%20up%20with%20something,%20like%20these%20snickerdoodle%20muffins,%20that%20is%20perfectly%20balanced%20all%20on%20its%20own:%20sweet,%20delicious%20and%20seemingly%20decadent,%20yet%20really%20not%20so%20bad%20for%20you.%3C/p%3E%3Cp%3EI've%20been%20thinking%20about%20snickerdoodle%20muffins%20since%20I%20saw%20some%20on%20Pinterest%20but%20have%20shied%20away%20because%20every%20recipe%20seems%20to%20call%20for%20about%2014%20sticks%20of%20butter.%20(Seriously,%20one%20recipe%20listed%202%20entire%20sticks%20of%20butter%20for%2012%20muffins.%20Seriously?%20That's%20just%20not%20right%20and%20I%20wouldn't%20do%20that%20to%20you.%20I%20like%20you%20non-ginormous.)%3C/p%3E%3Cp%3ESo,%20being%20all%20ninja-like,%20I%20decided%20to%20take%20a%20whack%20at%20my%20own%20version.%3C/p%3E%3Cp%3EOne%20with%20way%20less%20freakin'%20butter.%3C/p%3E%3Cp%3EAnd%20some%20ground%20oatmeal,%20so%20I%20could%20eat%20them%20for%20breakfast.%3C/p%3E%3Cp%3EI'm%20pretty%20pleased%20with%20the%20results,%20although%20I%20admit%20they%20are%20likely%20still%20a%20work%20in%20progress.%20They%20are%20definitely%20not%20an%20%22oh%20my%20god%20these%20are%20so%20decadent%22%20kind%20of%20muffin.%20(Wait,%20that%20wouldn't%20be%20a%20muffin%20at%20all,%20now%20would%20it?%20That%20would%20be%20a%20cupcake.)%20What%20they%20are%20is%20a%20not-so-sweet-but-tastes-like-a-snickerdoodle-cookie%20breakfast%20muffin.%3C/p%3E%3Cp%3EI%20have%20made%20them%20as%20both%20full-sized%20and%20mini%20muffins%20--%20both%20are%20great,%20but%20I'm%20quickly%20becoming%20a%20fan%20of%20the%20eat-it-in-one-biteyness%20of%20the%20mini%20muffin.%3C/p%3E%3Cp%3ESo,%20whaddya%20think?%20Going%20to%20give%20them%20a%20try?%20How%20would%20you%20change%20the%20recipe?%3C/p%3E%3Cp%3ESnickerdoodle%20Muffins%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EPlace%20the%20oats%20in%20a%20food%20processor%20and%20pulse%20until%20they%20resemble%20coarse%20flour.%20Whisk%20the%20ground%20oats%20in%20a%20bowl%20with%20the%20flour%20and%20cinnamon%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20stand%20mixer,%20cream%20together%20the%20butter%20and%20sugar.%20Slowly%20beat%20in%20the%20vanilla,%20egg%20and%20skim%20milk%20until%20pretty%20well%20blended%20(it%20will%20have%20bits%20of%20sugary%20butter%20in%20it).%20Add%20the%20dry%20ingredients%20to%20the%20wet%20and%20mix%20until%20just%20combined.%3C/p%3E%3Cp%3EFill%20muffin%20tins%20about%202/3%20full%20with%20batter%20and%20liberally%20sprinkle%20the%20tops%20with%20cinnamon%20sugar.%20Bake%20for%20about%2015%20minutes%20(closer%20to%2010%20or%2011%20minutes%20for%20mini%20muffins).%20Cool%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
