October is National Cookie Month. Tate's Bake Shop is offering a few food bloggers an opportunity to taste their award winning Whole Wheat Dark Chocolate Cookies.
Owner Kathleen King made her reputation--and a thriving bakery business-- on her famous chocolate chip cookies. Her bakery is located in the Hamptons-- a place I hope to visit someday.
Last December , I was one of the fortunate bloggers who was able to taste Tate's Chocolate Chip cookies-- and Tate's Bake Shop offered a giveaway to one of my lucky readers . ,%20the%20chopped%20pecans%20and%201%20Tablespoon%20cinnamon.%3C/p%3E%3Cp%3EMix%20it%20up,%20and%20set%20aside.%3C/p%3E%3Cp%3EFor%20the%20batter,%20I%20creamed%20one%20stick%20of%20room%20temperature%20butter%20(the%20recipe%20listed%202%20sticks%20of%20butter,%20but%20I%20reduced%20it)%20with%201%201/2%20cups%20sugar,%20until%20it%20was%20light%20and%20fluffy.%20%20I%20then%20added%202%20eggs,%202%20cups%20of%20sour%20cream,%20and%20one%20tablespoon%20of%20pure%20vanilla.%20%20The%20dry%20ingredients%20were%202%20cups%20of%20all-purpose%20flour,%201%20Tablespoon%20of%20baking%20powder%20and%201/4%20teaspoon%20salt.%3C/p%3E%3Cp%3EI%20dumped%20all%20of%20the%20dry%20ingredients%20at%20once,%20and%20pulsed%20my%20stand%20mixer%20a%20few%20times...then%20I%20folded%20the%20batter%20just%20until%20it%20was%20mixed.%20%20(I%20think%20this%20method%20was%20used,%20so%20that%20the%20dough%20isn't%20overworked.%20)%3C/p%3E%3Cp%3EI%20love%20using%20Baker's%20Joy%20spray.%20%20My%20cakes%20no%20longer%20stick,%20and%20I've%20had%20my%20share%20of%20bundt%20cake%20disasters.%20The%20batter%20is%20very%20thick,%20and%20I%20put%20half%20into%20the%20prepared%20pan%20and%20spread%20it%20evenly.%20%20Then,%20I%20layered%20half%20of%20the%20pecan-cinnamon%20mixture%20evenly.%20%20I%20added%20the%20remaining%20batter%20and%20finished%20it%20off%20with%20the%20remaining%20pecan-cinnamon%20mixture.%20%20Then%20it%20hit%20me...%20I%20should%20have%20used%20a%20spring%20form%20pan,%20so%20that%20the%20cinnamon%20topping%20would%20remain%20on%20top!%20%20Too%20late,%20now...%3C/p%3E%3Cp%3EBake%20at%20350%20for%201%20hour%20and%20ten%20minutes,%20is%20what%20the%20recipe%20says.%20HOWEVER,%20I%20could%20smell%20the%20heady%20aroma%20of%20cinnamon%20wafting%20from%20my%20kitchen,%20and%20throughout%20the%20house.%20%20I%20checked%20the%20cake%20at%2050%20minutes,%20and%20a%20toothpick%20left%20just%20a%20few%20crumbs%20attached.%20Done!%3C/p%3E%3Cp%3EI%20waited%20about%20five%20minutes,%20and%20placed%20a%20wire%20cooling%20rack%20on%20top%20of%20the%20cake--%20then%20flipped%20it.%20The%20cake%20slipped%20right%20out.%20I%20placed%20another%20wire%20cooking%20rack%20on%20top%20and%20flipped%20the%20cake%20again.%3C/p%3E%3Cp%3EThere.%20The%20topping%20is%20where%20it%20belongs.%20%20The%20moment%20has%20arrived,%20as%20I%20sliced%20into%20the%20warm%20cake...%3C/p%3E%3Cp%3EThe%20texture%20looks%20very%20promising.%3C/p%3E%3Cp%3EVERDICT:%20%20The%20cake%20had%20a%20very%20tender%20texture,%20indeed.%20%20It%20was%20moist,%20and%20the%20sour%20cream%20gave%20just%20the%20right%20amount%20of%20tang.%20%20Reducing%20the%20amount%20of%20butter,%20from%20two%20sticks,%20to%20one%20worked%20out%20fine,%20in%20my%20opinion.%20We%20loved%20the%20cinnamon-pecan%20filling,%20and%20I%20don't%20regret%20cutting%20back%20on%20the%20amount%20of%20pecans.%20I%20love%20pecans,%20but%20I%20wanted%20the%20cinnamon%20to%20be%20equal.%20%20I%20think%20using%20brown%20sugar%20was%20another%20bonus.%20%20Everyone%20went%20back%20for%20seconds.%20This%20is%20a%20great%20recipe,%20and%20I'll%20definitely%20make%20it%20again.%3C/p%3E%3Cp%3EThank%20you,%20Tate's%20Bake%20Shop%20for%20your%20generous%20gift.%20%20You,%20too,%20can%20have%20the%20opportunity%20to%20receive%20the%20same%20breakfast%20treats%20that%20I%20did,%20plus%20a%20signed%20copy%20of%20the%20Tate's%20Bake%20Shop%20cookbook!%3C/p%3E){kind=link}
