Receta Spanish Yellow Chicken Rice

Ingredientes
- 4 chicken breasts
- 6 drumsticks
- 6 full c. white rice
- 1 can tomato sauce
- 1 lg. onion
- 1 lg. green pepper
- 1 spoonful powdered garlic
- 1/4 spoon cumin
- 1 spoonful Bijol
- 1 can beer
- 1/4 c. extra virgin olive oil
- 1/2 spoonful salt
- 7 full c. water
- 1 (7 ounce) can Spanish sweet red pimientos
- 1 sm. can sweet green peas
Direcciones
- Chop onions and green peppers, saute in extra virgin olive oil for 5 min in pot. Cut chicken breast in half. Add in drumsticks and chicken breast to pot on medium heat, stirring gradually, for 10 min. Add in tomato sauce, garlic, cumin and Bijol and water in pot. Cover and let boil on medium heat for 15 min. Add in rice and salt into pot, uncovered on low heat, stir. Leave it on low till half of the water has evaporated. Add in beer, cover and let cook on low heat for about 15 min. Place in serving dish and decorate with pimientos and peas.
