A spicy tomato and broth-based soup with shredded chicken. This is really good served with tortilla chips!

  • 4 c. water
  • 3 boneless, skinless chicken breasts
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp dried parsley
  • 1 and 1/2 tsp onion powder
  • 2 chicken bouillon cubes
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 jar (16 oz) hot salsa
  • 1 can (10.75 oz) condensed tomato soup
  • 1 can (14.5 oz) peeled, diced tomatoes
  • 1 can of corn
  • 1 tbsp and 2 tsp chili powder

Direcciones

  1. In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon cubes.
  2. Bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear.
  3. Remove chicken, reserve broth.
  4. Shred chicken.
  5. In a large pot over medium heat, cook garlic in olive oil until slightly browned.
  6. Stir in salsa, diced tomatoes, tomato soup, chili powder, corn, shredded chicken and 5 cups broth.
  7. Simmer 30 minutes.
