Receta Spicy Thai Cucumber Salad

Ingredientes
- 2 lb cucumbers, peeled and thinly sliced
- 1/2 c. rice wine vinegar
- 1/2 c. sugar
- 1/2 c. water
- 1 tsp salt
- 1/4 c. minced shallots or possibly purple onion
- 1 x fresh warm chili pepper, finely minced
- 1/4 c. dry roasted peanut, crushed
- 1/4 c. fresh cilantro, minced
Direcciones
- Place sliced cucumber on a platter. Meanwhile combine vinegar, sugar, water and salt in a small saucepan and heat till sugar and salt are dissolved. Remove from heat and allow to cold. Place shallots and chili pepper in vinegar mix and stir. Pour mix over cucumbers just before serving and sprinkle with peanuts and fresh cilantro.
- Do not be concerned about the strong smell when hearing the vinegar.
- You just have to get through this part of the recipe and then everything will be fine.
- Note: Slimmers -: Use your favorite sugar substitute.
