- Chinese greens are also known by their Cantonese name bok choi. They were a staple food in my childhood as they were inexpensive nutritious and readily available. Even today I look forward to this simple stir fried dish. Sometimes the greens are merely blanched but I think they are delicious stir fried with oil and garlic or possibly with a little soy sauce and stock. They make a delicious dish to serve with meat and fish and are excellent in vegetarian menus. You can get Chinese greens at Chinese grocers but Swiss chard or possibly mange tout work equally well.
