Ingredientes
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon powdered sugar
- 1/3 cup, plus 1 tablespoon shortening
- 1/3 cup, plus 1 tablespoon cold butter
- 4 to 6 tablespoons cold water
- For the Filling:
- 2 1/2 cups chopped rhubarb, fresh
- 3 cups de-stemmed, washed and cut strawberries (cut in quarters)
- 1 1/2 cups sugar
- 2 tablespoons flour
- 1 tablespoon cornstarch or minute Tapioca
- 1/2 teaspoon lemon zest
- 1/2 teaspoon lemon juice
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 3 tablespoons butter, cut into 1/2-inch cubes
- 1 egg beaten with 1 teaspoon water. for egg wash
- 2 to 3 tablespoons turbinado sugar (large granular sugar), for topping on pie

%20I%20couldn't%20wait%20and%20dug%20right%20in...and%20then%20spit%20it%20right%20back%20out!%20%20I%20had%20FORGOTTEN%20THE%20SUGAR!!!!%20%20Between%20the%20phone%20ringing%20and%20the%20dog%20barking%20and%20the%20boy%20whining%20(he%20thought%20he%20only%20had%20to%20vacuum%20the%20upstairs!)%20I%20got%20discombobulated%20and%20forgot%20the%20sugar...but...have%20no%20fear,%20my%20beautiful-looking,%20albeit%20horrible-tasting%20pie%20was%20reborn%20in%20Slub!%3C/p%3E%3Cp%3EI%20scooped%20the%20entire%20pie%20into%20a%20bowl%20while%20it%20was%20still%20warm%20and%20stirred%20in%20the%20forgotten%20sugar...put%20it%20all%20into%20a%209x13%20dish,%20covered%20it%20with%20whipped%20cream%20and%20called%20it%20Strawberry-Rhubarb%20Slub%20and%20took%20it%20to%20a%20church%20meeting%20where%20it%20was%20lapped%20up!%20%20Berries,%20rhubarb%20and%20pie%20crust%20topped%20with%20whipped%20cream...couldn't%20have%20been%20better!%20%20But,%20the%20boy%20wanted%20PIE...so%20back%20into%20the%20kitchen%20I%20went!%3C/p%3E%3Cp%3EThis%20time%20I%20did%20not%20answer%20the%20phone,%20I%20locked%20the%20dog%20in%20his%20room%20(which%20is%20really%20my%20room%20but%20he%20thinks%20it's%20his)%20and%20I%20demanded%20silence%20from%20the%20boy!%20%20The%20sugar%20got%20mixed%20in%20and%20things%20were%20looking%20and%20smelling%20great!%3C/p%3E%3Cp%3EThe%20pie%20bird%20is%20so%20cute%20and%20it%20works,%20too!%20%20Pie%20birds%20have%20been%20around%20since%20the%20Victorian%20era%20-%20they%20are%20hollow%20and%20act%20as%20a%20vent%20to%20remove%20steam%20from%20the%20pie%20so%20the%20crust%20doesn't%20get%20soggy.%20%20I%20now%20am%20the%20proud%20owner%20of%20TWO%20pie%20birds%20and%20I'm%20certain%20there%20will%20be%20more%20in%20my%20future!%20%20If%20you%20haven't%20used%20a%20pie%20collar%20before,%20you%20should...it's%20a%20metal%20ring%20that's%20placed%20over%20the%20pie%20and%20it%20keeps%20the%20edges%20from%20browning%20too%20quickly%20-%20works%20like%20a%20charm!%20%20Oh,%20one%20more%20thing...there's%20a%20reason%20you%20should%20bake%20a%20pie%20on%20a%20cookie%20sheet...so%20it%20doesn't%20bubble%20over%20into%20the%20oven!%20%20What%20a%20mess!!!%20%20Thank%20Heavens%20for%20self-cleaning%20ovens%20-%20what%20a%20great%20invention%20that%20was!%3C/p%3E%3Cp%3EBrushed%20with%20an%20egg%20wash%20and%20sprinkled%20with%20turbinado%20sugar%20-%20it's%20dang%20pretty%20and%20dang%20good!%20%20FIVE%20dangs%20on%20the%20ol'%20meter!%20%20Light,%20flaky%20pie%20crust%20filled%20with%20sweet-tart%20goodness...it's%20a%20bite%20of%20Spring%20in%20your%20mouth!%3C/p%3E%3Cp%3EStrawberry-Rhubarb%20Pie%20~%20Pots%20and%20Pins%20(Crust%20recipe%20adapted%20from%20Betty%20Crocker,%20I%20like%20to%20add%20a%20bit%20more%20sweetness%20to%20my%20crust%20so%20I%20always%20toss%20in%20some%20powdered%20sugar.)%3C/p%3E%3Cp%3EFor%20the%20Crust:%3C/p%3E%3Cp%3ETo%20make%20crust:%20%20Mix%202%20cups%20flour%20and%201%20teaspoon%20salt%20in%20medium%20bowl.%20Cut%20in%20shortening%20and%20butter%20using%20a%20pastry%20blender,%20until%20particles%20are%20size%20of%20small%20peas.%20Sprinkle%20with%204%20to%206%20tablespoons%20cold%20water,%201%20tablespoon%20at%20a%20time,%20tossing%20with%20fork%20until%20all%20flour%20is%20moistened%20and%20pastry%20almost%20leaves%20side%20of%20bowl%20(1%20to%202%20teaspoons%20more%20water%20can%20be%20added%20if%20necessary).%3C/p%3E%3Cp%3EGather%20pastry%20into%20a%20ball.%20Divide%20in%20half%20and%20shape%20into%202%20flattened%20rounds%20on%20lightly%20floured%20surface.%20Wrap%20flattened%20rounds%20of%20pastry%20in%20plastic%20wrap%20and%20refrigerate%20about%2045%20minutes%20or%20until%20dough%20is%20firm%20and%20cold,%20yet%20pliable.%20This%20allows%20the%20shortening%20to%20become%20slightly%20firm,%20which%20helps%20make%20the%20baked%20pastry%20more%20flaky.%20If%20refrigerated%20longer,%20let%20pastry%20soften%20slightly%20before%20rolling.%3C/p%3E%3Cp%3ERoll%20one%20round%20on%20lightly%20floured%20surface,%20using%20floured%20rolling%20pin,%20into%20circle%202%20inches%20larger%20than%20upside-down%209-inch%20glass%20pie%20plate.%20Fold%20pastry%20over%20the%20rolling%20pin%20to%20help%20move%20it%20easily%20into%20the%20pie%20plate.%20%20Unroll%20and%20ease%20into%20plate,%20pressing%20firmly%20against%20bottom%20and%20side.%3C/p%3E%3Cp%3E(You%20can%20also%20make%20the%20pie%20crust%20in%20a%20food%20processor.%20%20Add%20all%20ingredients%20and%20process%20just%20until%20dough%20comes%20together%20in%20a%20ball.%20%20Remove%20and%20scrape%20all%20the%20bits%20together,%20then%20follow%20directions%20above%20for%20shaping%20into%20flattened%20rounds.)%3C/p%3E%3Cp%3ETo%20make%20filling:%20%20Mix%20the%20rhubarb%20and%20strawberries%20together%20in%20a%20large%20bowl.%20%20In%20a%20medium-size%20bowl,%20whisk%20together%20the%20sugar,%20flour,%20cornstarch%20(or%20tapioca),%20zest%20and%20cinnamon.%20%20Whisk%20in%20the%20juice%20of%20lemon%20and%20vanilla.%20Pour%20the%20sugar%20mixture%20over%20the%20rhubarb%20and%20strawberries%20and%20mix%20well.%3C/p%3E%3Cp%3EIf%20you're%20going%20to%20use%20a%20pie%20bird,%20set%20it%20into%20the%20center%20of%20the%20pie.%20%20Spoon%20the%20rhubarb-strawberry%20mixture%20into%20the%20prepared%20crust,%20around%20the%20pie%20bird.%20(**If%20not%20using%20a%20pie%20bird%20see%20below%20for%20venting.)%20%20Dot%20the%20top%20of%20the%20filling%20with%20the%20cold%20butter%20pieces.%20%20Roll%20out%20the%20other%20round%20of%20pastry.%20%20Place%20on%20top%20of%20pie%20over%20filling;%20trim%20overhanging%20edge%201-inch%20from%20rim%20of%20pie%20plate.%20%20Fold%20and%20roll%20top%20edge%20under%20lower%20edge,%20pressing%20on%20rim%20to%20seal,%20flute%20as%20desired.%3C/p%3E%3Cp%3EBrush%20with%20egg%20white%20wash%20and%20garnish%20with%20sprinkle%20turbinado%20sugar%20on%20top.%20%20Either%20use%20a%20pie%20collar%20or%20use%20foil%20to%20cover%20the%20crusts%20of%20the%20pie.%20**If%20you're%20not%20using%20a%20pie%20bird%20then%20make%205%20slits%20in%20the%20top%20of%20the%20pie%20to%20allow%20the%20pie%20to%20vent.%20%20Bake%20in%20a%20preheated%20425%20degree%20oven%20for%2015%20minutes.%20%20Then%20decrease%20temperature%20to%20375%20degrees%20and%20bake%20for%20an%20additional%2045%20to%2050%20minutes%20or%20until%20the%20filling%20is%20bubbly%20and%20the%20top%20of%20pie%20is%20golden%20brown.%20%20Remove%20from%20oven%20and%20allow%20pie%20to%20cool%20completely%20before%20cutting%20to%20allow%20for%20the%20juices%20to%20set.%3C/p%3E%3Cp%3EThe%20stores%20still%20have%20rhubarb%20but%20not%20for%20long%20so%20if%20you're%20going%20to%20make%20this%20pie%20-%20do%20it%20today!%3C/p%3E){kind=link}
