Receta Strawberry Shortcake Muffins
I had really intended to make strawberry shortcake for the 4th of July but that didn't happen so I had strawberries that I needed to use.
Ingredientes
- 1-1/2 cups strawberries
- 6 oz light yogurt, vanilla
- 2/3 cup unsalted butter, melted
- 1 cup sugar
- 1/4 cup light brown sugar
- 2 eggs, beaten
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup flour
- 1 cup whole wheat flour
- 1/2 cup oats
- Pinch salt
Direcciones
- Preheat the oven to 350°F. Place baking liners in a muffin pan and spray lightly with non-stick cooking spray.
- In a large bowl combine sugars, eggs and vanilla. Stir in the yogurt and butter. In a separate bowl, mix flours, oats, baking soda and baking powder. Stir the dry ingredients into the wet mixture. Fold in strawberries.
- Divide the batter equally among the muffin cups. Bake for 25 minutes, or until a toothpick inserted in the middle comes out clean.
