Ingredientes
- 2 cups flour, plus extra for dusting
- 1 large lemon, zested (about 2 teaspoons)
- 1 large orange, zested (about 3 teaspoons)
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 stick butter, cut into 1/2-inch pieces, at room temperature
- 3 large eggs
- 1 tablespoon rum or rum extract (you could also use brandy or white wine or just add additional vanilla)
- 1 teaspoon vanilla extract
- Canola oil for frying
- Glaze:
- 1 cup honey
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 1/2 cups nuts, toasted (hazelnuts, pecans, almond, walnuts, peanuts, whatever you like)
- vegetable oil cooking spray
- Christmas sprinkles for decoration
- powdered sugar for dusting, optional

%20and%20even%20though%20he%20whined%20and%20complained%20and%20covered%20himself%20and%20the%20floor%20with%20flour,%20he%20thoroughly%20enjoyed%20himself!%20%20Such%20a%20rare%20thing!%3C/p%3E%3Cp%3EAfter%20the%20sweet%20dough,%20which%20includes%20orange%20and%20lemon%20zest,%20has%20rested%20in%20the%20refrigerator%20for%2030%20minutes,%20it's%20rolled%20out,%20cut%20into%20half-inch%20strips,%20then%20those%20strips%20are%20cut%20into%20half-inch%20pieces%20which%20are%20rolled%20into%20little%20balls.%20%20The%20balls%20are%20then%20deep%20fried%20until%20golden%20brown...and%20the%20Struffoli%20is%20half%20way%20done...%3C/p%3E%3Cp%3EGo%20ahead%20and%20pop%20a%20few%20of%20these%20delicious%20mini-donut-like%20morsels%20into%20your%20mouth%20-%20after%20all,%20it's%20Christmas%20and%20calories%20don't%20count!%20%20%20But%20don't%20eat%20them%20all...because%20it's%20not%20Struffoli%20until%20those%20little%20balls%20of%20goodness%20are%20glazed.%20%20Into%20a%20large%20pot%20honey%20is%20combined%20with%20sugar%20and%20lemon%20juice%20and%20when%20the%20sugar%20has%20melted,%20pecans%20are%20stirred%20in%20-%20or%20you%20could%20use%20hazelnuts,%20which%20is%20what%20traditional%20Italians%20use,%20or%20use%20whatever%20nut%20lights%20your%20tree.%20%20Pine%20nuts%20are%20great,%20walnuts%20would%20be%20good%20and%20almonds%20would%20be%20fabulous!%20%20After%20the%20nuts%20are%20coated%20in%20the%20sugar%20mixture,%20then%20the%20mini-balls%20are%20added%20in...and%20when%20they%20are%20completely%20coated%20it's%20Struffoli%20Time!%3C/p%3E%3Cp%3EIF%20you%20want%20to%20make%20your%20Struffoli%20the%20tradional%20way,%20then%20just%20pile%20them%20high%20onto%20a%20plate,%20sprinkle%20with%20Christmas%20sprinkles%20and%20call%20it%20good...IF%20you%20want%20to%20make%20your%20Struffoli%20a%20bit%20more%20festive%20you%20can%20do%20what%20I%20did,%20make%20a%20Struffoli%20wreath!%20%20(I%20learned%20this%20trick%20from%20Giada%20DiLaurentiis!)%20%20Spray%20a%20straight-sided%20glass%20with%20cooking%20spray,%20so%20it%20will%20remove%20easily,%20and%20set%20it%20in%20the%20center%20of%20a%20decorative%20plate.%20%20Pile%20the%20Struffoli%20around%20the%20glass%20and%20let%20it%20sit%20for%20about%203%20minutes,%20then%20remove%20the%20glass%20-%20instant%20Christmas%20fun!%20%20Sprinkle%20the%20Struffoli%20with%20sprinkles%20and%20it's%20ready%20to%20serve...%3C/p%3E%3Cp%3EIf%20your%20Grinch's%20heart%20is%20two%20sizes%20too%20small,%20this%20is%20what%20you%20need%20to%20feed%20him...it%20will%20turn%20him%20into%20a%20jolly%20old%20elf%20in%20no%20time!%3C/p%3E%3Cp%3EStruffoli%20-%20Adapted%20from%20Giada%20DeLaurentiis%3C/p%3E%3Cp%3EDough:%3C/p%3E%3Cp%3EFor%20the%20dough:%20In%20the%20bowl%20of%20a%20food%20processor,%20pulse%20together%202%20cups%20of%20flour,%20lemon%20zest,%20orange%20zest,%20sugar,%20salt,%20and%20baking%20powder.%20Add%20the%20butter%20and%20pulse%20until%20the%20mixture%20resembles%20a%20coarse%20meal.%20Add%20the%20eggs,%20rum,%20if%20using,%20and%20vanilla.%20Pulse%20until%20the%20mixture%20forms%20into%20a%20ball.%20Wrap%20the%20dough%20in%20plastic%20wrap%20and%20refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3ECut%20the%20dough%20into%204%20equal-sized%20pieces.%20On%20a%20lightly%20floured%20surface,%20roll%20out%20each%20piece%20of%20dough%20until%201/4-inch%20thick.%20Cut%20each%20piece%20of%20dough%20into%201/2-inch%20wide%20strips.%20Cut%20each%20strip%20of%20pastry%20into%201/2-inch%20pieces.%20Roll%20each%20piece%20of%20dough%20into%20a%20small%20ball%20about%20the%20size%20of%20a%20hazelnut.%20Lightly%20dredge%20the%20dough%20balls%20in%20flour,%20shaking%20off%20any%20excess.%20In%20a%20large%20heavy-bottomed%20saucepan,%20pour%20enough%20oil%20to%20fill%20the%20pan%20about%20a%20third%20of%20the%20way.%20Heat%20over%20medium%20heat%20until%20a%20deep-frying%20thermometer%20inserted%20in%20the%20oil%20reaches%20375%20degrees%20F.%20(If%20you%20don't%20have%20a%20thermometer%20a%20cube%20of%20bread%20will%20brown%20in%20about%203%20minutes.).%20In%20batches,%20fry%20the%20dough%20until%20lightly%20golden,%20about%202%20to%203%20minutes.%20Transfer%20to%20a%20paper%20towel-lined%20plate%20to%20drain.%20%20Continue%20until%20all%20of%20the%20dough%20has%20been%20fried.%3C/p%3E%3Cp%3ETo%20make%20the%20glaze:%20%20In%20a%20large%20saucepan,%20combine%20the%20honey,%20sugar,%20and%20lemon%20juice%20over%20medium%20heat.%20Bring%20to%20a%20boil%20and%20cook,%20stirring%20occasionally,%20until%20the%20sugar%20is%20dissolved,%20about%203%20minutes.%20Remove%20the%20pan%20from%20the%20heat.%20Add%20the%20nuts%20and%20stir%20until%20coated%20in%20the%20honey%20mixture.%20Add%20the%20fried%20dough%20and%20stir%20until%20well%20coated.%20%20Allow%20the%20mixture%20to%20cool%20in%20the%20pan%20for%202%20minutes.%3C/p%3E%3Cp%3ESpray%20the%20outside%20of%20a%20small,%20straight-sided%20water%20glass%20with%20vegetable%20oil%20cooking%20spray%20and%20place%20in%20the%20center%2
