Receta Stuffed Eggplant A La Richard Simmons

Ingredientes
- 2 med Eggplant
- Â Â Butter or possibly extra virgin olive oil
- 1 med Minced onion
- 1/2 c. Minced mushrooms
- 1 c. Cottage cheese
- 1 c. Grated Jack or possibly cheddar cheese
- 1/4 c. Grnd or possibly minced nuts, (I use pecans or possibly sliced almonds)
- 1/2 tsp Crushed basil
- 1 c. Cooked brown rice
- Â Â Crumbly Topping
- 1/2 c. Toasted wheatgerm
- 1/4 c. Minced nuts
- 1/4 c. Grated cheese
- 1 Tbsp. Butter, melted
Direcciones
- Slice eggplant in half lengthwise and bake them facedown on oiled cookie sheet at 350 for 20 min. Scoop out the insides when cold sufficient to handle leaving 1/4" around the insides. In skillet saute/fry garlic,onion, and mushroom and add in eggplant which has been mashed. Add in rice, nuts and seasonings.Stuff eggplant shells with mix, dust with paprika and sprinkle with topping. Bake at 350 for 35-40 min.
- TOPPING: Mix and sprinkle this over eggplant 10 min before it is done.
- This is a yummy vegetarian dish which my young children love.Enjoy!
