Receta Sugar and Butter Free Apple Cake

Despite having no butter or sugar, this recipe creates a really moist and sweet cake that you don't need to feel guilty about eating. So bake two loaves because it will go very quickly!

  1. Cover the mixed fruit with water in a pan and boil gently until all the water is absorbed. Drain and cool.
  2. If you're making the applesauce, dice the apples (leave skin on), and place in a pan with the cinnamon. Add water to cover the apples halfway. Bring to the boil, then simmer until you can mash it up.
  3. Mix the applesauce, concentrate, oil, eggs and vanilla in a large bowl.
  4. Sift the rest of the dry ingredients in a large bowl, then fold in the mixed fruit.
  5. Fold in the apple mixture, then transfer to your cake tin.
  6. Bake at 175 degrees C for about an hour.

      Nutritional values are not really my area of knowledge I'm afraid but there is a feature on CES that I believe gives quite a useful breakdown, if you look at the table to the right of the ingredient list. I hope that is useful, sorry not to be of more help!

      Hi, you should be able to get apple concentrate from any supermarket, it's just apple squash really, basically the bottles you buy where you have to add water to dilute it before drinking.

        Dried fruit - raisins, sultanas, apricots, dates, etc. You can usually buy a bag of mixed fruit in the baking section. Hope that helps. Now where can I get apple concentrate?
