  • 1/2 lb Italian sausage casings removed
  • 1/2 lb fresh mushrooms sliced
  • 1 sm onion minced
  • 1 sm green bell pepper minced
  • 2 x frzn thin-crust cheese pizzas (17 ounce ea), thawed
  • 1 Tbsp. extra virgin olive oil
  • 1 c. shredded mozzarella cheese - (4 ounce) see * Note

  1. * Note: Do not stop here! Include your favorite pizza toppings and, for a little extra punch, substitute Italian cheese blend for the mozzarella. Buon appetito!
  2. Preheat the oven to 375 degrees. Place a 2 1/2-foot sheet of aluminum foil on a 12- to 14-inch pizza pan.
  3. In a large skillet, cook the sausage, mushrooms, onion, and pepper over medium-high heat for 10 min, stirring occasionally till the sausage is browned and the vegetables are fork-tender, drain.
  4. Place 1 pizza cheese-side up on the pan and spread the sausage mix proportionately over the pizza. Top with the remaining pizza cheese-side down, pressing the pizzas together. Fold and seal the aluminum foil over the stuffed pizza.
  5. Bake for 20 to 25 min, or possibly till heated through. Uncover the pizza, brush the top with the oil and sprinkle proportionately with the cheese. Bake, uncovered, for 15 to 20 min, or possibly till the cheese is golden brown.
  6. This recipe yields 8 servings.
