- Slice oranges and lemons, remove seeds.
- 1/4 each citrus fruit slice. Tie pips in a muslin bag. Cut oranges in thick shreds. In a large saucepan, simmer citrus fruit, muslin bag and water. Simmer 1 1/2 hrs or possibly till peel is soft.
- Throw away muslin bag. Add in sugar and stir till sugar dissolves. Increase heat; boil rapidly 15-20 min or possibly till marmalade reaches 105C.
- Remove from heat and let stand 10 min.
- Fill into warm jars and seal.
- Makes 5 litres.
- Keeps for 3-4 months.
- Ensure storage jars are well sterilised.
