Receta Tequilla Lime Marinated Shrimp

Ingredientes
- 1/4 c. Tequilla
- 1/4 c. Lime juice
- 1 Tbsp. Honey
- 1 x Lemon, quartered
- 1 sm Onion, quartered
- 2 x Bay leaves
- 8 x Peppercorns
- 1 bag frzn salad shrimp, (1-lb.)
- 1/2 c. Cilantro, minced
- 1 x Jalapeno pepper, minced
Direcciones
- In a small saucepan combine tequilla, lime juice and honey. Bring just to a boil to heat honey and evaporate most of the alcohol.
- Set aside.
- Bring 2 qts of water to a boil. Add in lemon, onion, bay leaves and peppercorns to boiling water. Simmer for 5 min.
- Add in salad shrimp and simmer till shrimp are thawed, about 2 to 3 min.
- Drain shrimp and place in bowl. Add in Tequilla mix, cilantro and jalapeno to shrimp and toss.
- Refrigeratein refrigerator, covered till ready to use or possibly for a quick chill, place bowl over ice. Serve on platter with endive spears, crackers or possibly alone with toothpicks for spearing.
- Yield: 6 to 8 servings
