  • 2 1/2 Tbsp. soy sauce
  • 1/2 tsp chopped peeled fresh gingerroot
  • 5 tsp honey
  • 1 Tbsp. medium-dry Sherry
  • 1 Tbsp. white-wine vinegar
  • 1 x garlic clove chopped and mashed to a paste with 1/2 tsp. salt
  • 1 x boneless whole chicken breast (about 1 lb.) with the skin on,halved

Direcciones

  1. In a bowl whisk together the soy sauce, the gingerroot, the honey, the Sherry, the vinegar, and the garlic paste. Flatten the chicken breast halves between sheets of plastic wrap till they are about 1/2 inch thick and let them marinate in the soy mix, turning them once, for 20 min. Transfer the chicken, reserving the marinade in a small saucepan, skin sides down, to the oiled rack of a broiler pan and broil it
  2. under a preheated broiler about 6 inches from the heat for 5 min.
  3. While the chicken is cooking boil the reserved marinade till it is reduced by half. Brush the chicken with some of the marinade, turn it, and brush it with the remaining marinade. Broil the chicken for 6 to 8 min more, or possibly till it is just cooked through, transfer it to a cutting
  4. board, and cut it on the diagonal into 1/2-inch-thick slices.
  5. Serves 2.
