%20-%20opting%20instead%20to%20have%20all%20our%20friends%20over%20the%20Saturday%20following.%3C/p%3E%3Cp%3ESomehow%20I%20managed%20to%20get%20the%2013%20lb%20(6%20Kilo)%20Turkey%20defrosted%20in%20one%20day,%20hunted%20down%20some%20of%20the%20harder%20to%20find%20ingredients%20like%20sweet%20potatoes%20and%20cranberries,%20and%20even%20-gasp-%20made%20a%20couple%20of%20pies.%20I%20am%20not%20really%20known%20for%20being%20a%20baker%20-%20and%20pie%20especially%20was%20always%20one%20of%20those%20things%20that%20I%20only%20did%20once%20a%20year,%20under%20duress,%20and%20with%20the%20help%20of%20Pillsbury's%20pre-made%20pie%20crusts.%3C/p%3E%3Cp%3EReally,%20crust%20was%20always%20that%20thing%20I%20just%20sort%20of%20ate%20around%20in%20pie.%20I%20really%20never%20cared%20for%20it,%20and%20usually%20its%20because%20it%20tasted%20like%20cardboard.%20And%20who%20knows%20whats%20in%20those%20pre-made%20crusts,%20really.%20I%20do%20know%20what%20is%20in%20this%20crust%20-%20and%20I%20know%20that%20it%20tastes%20amazing,%20flakes%20perfectly%20and%20is%20sooo%20simple%20and%20cheap%20to%20throw%20together%20a%20day%20or%20even%20a%20week%20before%20the%20big%20event.%20So%20file%20this%20one%20away%20for%20all%20those%20upcoming%20holiday%20celebrations!%3C/p%3E%3Cp%3EThe%20Perfect%20Pie%20Crust%3C/p%3E%3Cp%3EPlace%20the%20flour%20(lightly%20sifted),%20salt,%20and%20butter%20into%20a%20bowl.%20Cut%20the%20butter%20into%20the%20flour%20with%20two%20sharp%20knives%20or%20a%20pastry%20blender,%20until%20the%20flour%20seems%20like%20little%20crumbs.%3C/p%3E%3Cp%3ENow,%20add%20the%20water%20one%20or%20two%20tablespoons%20at%20a%20time,%20combing%20with%20a%20fork%20as%20you%20go,%20until%20the%20dough%20starts%20to%20stick%20to%20together%20and%20well,%20seems%20like%20dough.%20You%20want%20the%20dough%20to%20be%20a%20bit%20sticky%20and%20easily%20forms%20into%20a%20ball.%20If%20you%20leave%20it%20too%20dry,%20I%20find%20that%20the%20crust%20will%20be%20kinda%20tough.%3C/p%3E%3Cp%3ECover%20in%20plastic%20wrap%20and%20refrigerate%20for%20around%20an%20hour,%20or%20freeze%20for%20up%20to%20a%20week.%3C/p%3E%3Cp%3ERemove%20from%20plastic%20and%20on%20a%20well-floured%20surface%20roll%20the%20dough%20out%20from%20the%20center%20of%20the%20ball%20into%20a%20thing%20flat%20circle%20(don't%20have%20a%20rolling%20pin?%20I%20used%20a%20vodka%20bottle!).%20Nice%20tip%20for%20easy%20clean%20up:%20place%20a%20bit%20of%20water%20on%20your%20counter,%20then%20stick%20down%20some%20plastic%20wrap%20and%20flour%20that.%20You%20will%20thank%20yourself%20when%20you%20are%20not%20trying%20to%20wipe%20up%20sticky%20gooey%20flour%20from%20your%20counters.%3C/p%3E%3Cp%3EOnce%20you%20have%20it%20rolled%20flat,%20roll%20the%20whole%20thing%20loosely%20over%20your%20rolling%20pin%20(ahem,%20vodka%20bottle)%20and%20then%20unroll%20over%20your%20pie%20plate.%20Gently%20press%20down%20and%20cut%20off%20any%20excess%20dough%20with%20kitchen%20shears,%20leaving%20about%20an%20inch%20to%20an%20inch%20and%20a%20half%20over%20the%20edge%20to%20fold%20over%20and%20crimp.%3C/p%3E%3Cp%3EHow%20easy%20is%20that??%3C/p%3E){kind=link}
