%20angel%20food%20cake.%20but%20then%202%20things%20happened.%20First%20I%20found%20such%20a%20recipe%20to%20be%20more%20difficult%20to%20come%20by%20than%20I%20had%20anticipated.%20I%20have%20no%20doubt%20I%20could%20have%20found%20one%20online,%20but%20I%20was%20trying%20to%20use%20my%20tried%20and%20trusted%20cookbooks.%20Then,%20a%20good%20friend%20of%20mine%20sent%20me%20a%20Christmas%20care%20package%20full%20of%20wonderful%20foodie%20goodies,%20including%20the%20book%20Cake%20Keeper%20Cakes,%20by%20Lauren%20Chattman.%20In%20addition%20to%20tons%20of%20other%20recipes%20I%20instantly%20bookmarked,%20she%20had%20a%20recipe%20for%20a%20Vanilla%20Bean%20Chiffon%20Cake%20which%20seemed%20like%20it%20would%20work%20as%20well%20as%20an%20angel%20food%20cake%20for%20my%20purposes.%3C/p%3E%3Cp%3EThis%20cake%20was%20very%20sweet.%20So%20sweet,%20that%20while%20I%20completely%20recommend%20this%20cake,%20I%20do%20so%20only%20if%20you%20plan%20to%20serve%20it%20with%20something.%20In%20my%20case%20that%20something%20was%20whipped%20cream,%20lightly%20sweetened,%20which%20transformed%20the%20cake%20into%20a%20sublime%20experience.%20In%20the%20summer,%20fresh%20berries%20would%20be%20wonderful%20as%20well.%20You%20get%20the%20idea.%3C/p%3E%3Cp%3EJust%20like%20with%20the%20Chocolate%20Angel%20Food%20Cake,%20all%20of%20these%20pictures%20were%20taken%20the%20day%20after%20serving%20it%E2%80%93hence%20no%20pictures%20of%20the%20intact%20cake.%3C/p%3E%3Cp%3EVanilla%20Bean%20Chiffon%20Cake%3C/p%3E%3Cp%3EAdapted%20from%20Cake%20Keeper%20Cakes%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20F.%20Set%20aside%20an%20angel%20food%20cake%20pan%20with%20removable%20bottom%E2%80%93Chattman%20calls%20for%20a%209%20inch%20tube%20pan%20but%20my%2010%20inch%20one%20worked%20fine.%3C/p%3E%3Cp%3EFirst%20sift%20and%20then%20whisk%20together%20the%20flour,%20baking%20powder,%20and%20salt.%20Set%20aside.%20Scrape%20the%20seeds%20out%20of%20the%20vanilla%20beans%20and%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%205%20egg%20yolks%20and%202%20whole%20eggs%20in%20the%20bottom%20of%20a%20large%20mixer%20bowl.%20Beat%20on%20medium%20high%20speed%20until%20lightened%20in%20color,%20about%203%20minutes.%20While%20the%20mixer%20is%20still%20running,%20add%201%20cup%20of%20sugar%20in%20a%20slow,%20steady%20stream.%20Te%20mixture%20will%20lighten%20further%20and%20increase%20in%20volume,%20which%20will%20take%20about%205%20more%20minutes.%20With%20the%20mixer%20still%20running,%20add%20the%20oil%20in%20a%20steady,%20slow%20stream%20and%20beat%20one%20more%20minute.%3C/p%3E%3Cp%3EReduce%20the%20mixer%20speed%20to%20low%20and%20add%201/3%20of%20the%20flour%20mixture,%20and%20then%201/2%20of%20the%20water.%20Repeat%20and%20then%20end%20with%20the%20flour%20mixture,%20scraping%20down%20the%20sides%20of%20the%20bowl%20in%20between%20additions.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20clean%20bowl%20and%20mixer,%20whip%20the%20eggs%20whites%20on%20medium%20speed%20until%20they%20are%20frothy.%20Add%20the%20cream%20of%20tartar%20and%20continue%20to%20whip%20on%20medium%20speed%20until%20the%20mixture%20turns%20white.%20Still%20on%20medium%20speed,%20add%20the%20last%201/2%20cup%20of%20sugar%20in%20a%20slow,%20steady%20speed%20and%20whip%20until%20the%20whites%20hold%20stiff%20peaks.%3C/p%3E%3Cp%3EFold%201/4%20of%20the%20egg%20whites%20into%20the%20batter%20to%20lighten%20it.%20Then%20fold%20the%20remaining%20egg%20whites%20into%20the%20batter%20gently,%20until%20completely%20mixed,%20deflating%20the%20eggs%20whites%20as%20little%20as%20possible.%20Pour%20the%20batter%20into%20the%20tube%20pan,%20and%20smooth%20the%20top.%20Bake%20until%20the%20cake%20springs%20back%20when%20you%20touch%20it,%2055-60%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20cake%20from%20the%20oven.%20Invert%20the%20cake%20over%20a%20wine%20bottle%20to%20allow%20air%20to%20circulate%20completely%20under%20it.%20Let%20the%20cake%20cool%20completely%20in%20the%20pan,%20about%202%20hours.%20To%20remove,%20slide%20a%20knife%20around%20the%20edges,%20being%20careful%20to%20leave%20as%20much%20of%20the%20crust%20intact%20as%20possible%20(easier%20said%20than%20done%20sometimes%E2%80%93I%20succeeded%20partially).%20Remove%20the%20sides.%20Then%20use%20the%20knife%20to%20also%20loosen%20the%20cake%20from%20the%20bottom%20of%20the%20pan.%20Working%20quickly%20and%20carefully,%20invert%20the%20cake%20off%20of%20the%20bottom%20and%20then%20invert%20it%20again%20onto%20a%20serving%20platter.%20Serve%20with%20whipped%20cream.%3C/p%3E){kind=link}
