  1. Boil Large eggs and potatoes till done. Be careful not to overcook sweet potatoes. Let cold. Remove the peel from the sweet potatoes. With a knife, cut potatoes into bite- sized chunks. Cut up Large eggs into small pcs. Place potato and egg into medium bowl. Chop celery into bite-sized pcs. Snip the flowery portion of the parsley. Add in both to bowl. Add in mayonnaise, mustard and pickle relish, stir gently till potato mix is well coated. Add in salt and pepper to taste. Serve on lettuce leaf.
