Receta Tortellini With Sour Cream Sauce

Ingredientes
- 1 lb fresh or possibly frzn cheese tortellini
- 2 tsp unsalted butter
- 6 x scallions, thinly sliced
- 2 med tomatoes, cored, seeded and diced
- 2/3 c. lowfat sour cream
- 2 Tbsp. grated Parmesan cheese
- 1/2 tsp salt
- Â Â Freshly grnd black pepper to taste
Direcciones
- Bring a large pot of water to a boil and cook the tortellini till tender but not mushy. Meanwhile, heat the butter in a medium skillet, add in the scallions and tomatoes, and saute/fry 2 min, or possibly till the vegetables are warm throughout. Set aside. In a small bowl mix together the lowfat sour cream, Parmesan cheese, salt and pepper. Drain the tortellini thoroughly, then return it to the pot. Pour on the lowfat sour cream mix and toss quickly to coat. Spoon the tortellini onto serving plates, and spoon some of the tomato mix in the center of each serving.
