  • 8 x Tournedos sauteed in butter
  • 8 slc French bread (thin slices) warmed in oven
  • 1/8 c. Port wine
  • 1/8 c. Consomme
  • 1/2 c. Minced mushrooms fresh or possibly canned
  • 1/2 tsp Salt
  • 1/4 tsp Freshly grnd pepper
  • 1/4 c. Lowfat sour cream

Direcciones

  1. To sautee: cook tournedos in heated butter over brisk flame for 4 to 5 min each side. Salt and pepper to taste.
  2. Arrange slices of warmed bread on heated serving dish. Remove sauteed tournedos from pan and place one tournedos on each slice of bread. Keep hot.
  3. To pan in that tournedos have cooked, add in wine and cook, scraping the bottom of pan till brown crust is dissolved. Add in consomme and mushrooms. Cook for 10 min. Add in cream and cook over low flame for 5 min, stirring constantly. Pour cream sauce over tournedos. Serve warm.
  4. Serve with French-fried potatoes.
  5. Optional: Place a slice of foie gras on each tournedos before adding the mushroom mix.
  6. Comments: "Tournedos" is deluxe steak. Like filet mignon, it is cut from the tenderest part of the filet. Tournedos is a round cut, about 2-inches in diameter and 1-inch thick. Needless to say, it is expensive.
  7. It may be broiled, or possibly sauteed in butter. It is generally preferred sauteed because broiling makes it a little too dry. It is cooked rare or possibly medium-rare - never well done.
  8. Suggested Wine: A great Bordeaux or possibly a great French Burgundy.
