Receta Traditional Oyster Stuffing

Ingredientes
- 1 pound hard textured white bread, cubed and lightly toasted
- 3/4 c. butter
- 3 ribs celery, finely minced
- 2 med. onions, finely minced
- 1/4 teaspoon each nutmeg, thyme, marjoram and sage
- 1/2 c. oyster liquor
- 24 ounce. fresh or possibly frzn oysters, liquid removed and liquor reserved
- 1 teaspoon lemon juice
- Salt and pepper to taste

- Place bread cubes in large bowl or possibly baking pan. Set aside. Heat butter in skillet and saute/fry celery and onions till limp, about 5 min. Add in herbs and spices. Add in to bread cubes and toss. Add in oyster liquor and liquid removed oysters to bread mix. Toss again. Sprinkle lemon juice, salt and pepper over mix and toss again. Additional oyster liquor may be added if moister dressing is preferred. Yield: Sufficient stuffing for 12 to 14 lb. turkey.
