- Tropical Black Bean Soup - Pots and Pins
- 1/2 stick butter
- 1 large shallot, chopped
- 1 large red pepper, seeded and chopped
- 4 medium carrots, peeled and chopped
- 2 teaspoons garlic, minced
- 1 can (14 oz.) coconut milk (do not use cream of coconut)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large banana, peeled and sliced
- 3 cans (15 oz.) black beans, drained and rinsed
- 1 cup orange juice
- juice of half a lime

%20is%20going%20to%20be%20ten%20years%20old%20soon...which%20is%2070%20in%20dog%20years...and%20we%20fear%20senility%20has%20begun%20to%20set%20in.%20%20Last%20night,%20while%20aboard%20the%20Dreamland%20Express,%20we%20were%20awakened%20by%20his%20crying.%20%20I%20pretended%20not%20to%20hear%20just%20until%20the%20mister%20got%20up%20and%20turned%20on%20the%20light...one%20of%20Caesar's%207%20pink%20plush%20pigs%20was%20under%20the%20bed%20and%20he%20couldn't%20get%20it...he%20has%20to%20have%20all%20of%20his%20pigs%20on%20the%20bed%20at%20night%20or%20NONE%20of%20us%20can%20sleep...apparently%20this%20one%20escaped%20somehow.%20%20The%20mister%20retrieved%20his%20pig,%20Caesar%20jumped%20back%20on%20the%20bed%20and%20all%20was%20well...until%20an%20hour%20later%20when%20Caesar%20began%20crying%20again...the%20mister%20said,%20%22What%20the%20%23!$!%20is%20the%20problem%20now?!?%22%20%20And%20there%20was%20Caesar,%20on%20the%20floor,%20peering%20under%20the%20bed,%20trying%20to%20get%20his%20pig...which%20he%20had%20OBVIOUSLY%20PUT%20THERE!%20%20The%20mister%20grabs%20it%20and%20Caesar%20and%20drops%20them%20both%20back%20on%20the%20bed...the%20light%20goes%20off%20and%20not%2010%20minutes%20later%20Caesar%20jumps%20off%20the%20bed%20with%20his%20pig...pushes%20it%20under%20the%20bed%20and%20then%20cries%20for%20his%20dad%20to%20help%20him.%20%20He%20was%20PLAYING%20with%20us...at%20THREE%20A.M.!%20Needless%20to%20say,%20we%20are%20bleary-eyed%20this%20morning...and%20Caesar%20is%20sleeping%20like%20a%20dog.%3C/p%3E%3Cp%3ECaesar%20sucks%20on%20the%20pigs%20heads...every%20night...like%20a%20baby%20sucking%20on%20a%20pacifier...he%20is%20SO%20STRANGE...we'll%20continue%20to%20obey%20him%20and%20do%20what%20he%20demands%20because%20we%20love%20him%20and%20because%20we%20hate%20being%20bitten!%3C/p%3E%3Cp%3ENow,%20about%20this%20soup...it's%20really,%20really%20wonderful%20-%20and%20different.%20%20I%20love%20black%20bean%20soup%20and%20have%20two%20other%20recipes%20for%20it%20on%20this%20blog,%20here%20and%20here.%20%20But%20this%20soup%20is%20nothing%20like%20either%20of%20those...it%20has%20a%20definite%20island%20flavor...coconut%20milk,%20bananas,%20orange%20juice%20and%20lime...I%20would%20have%20thrown%20in%20some%20palm%20trees%20swaying%20in%20the%20breeze%20if%20I'd%20had%20any!%20%20It's%20creamy,%20filling%20and%20healthy...especially%20now%20since%20%22they've%22%20said%20coconut%20milk%20is%20GOOD%20for%20us!%20%20Give%20this%20one%20a%20try,%20I%20know%20you'll%20love%20it!%3C/p%3E%3Cp%3EIn%20a%20large%20soup%20pot,%20melt%20butter%20and%20add%20shallots,%20red%20pepper%20and%20carrots.%20%20Cook%20for%207%20to%208%20minutes%20or%20until%20shallots%20are%20soft.%20%20Add%20garlic%20and%20cook%20for%20one%20minute%20more,%20stirring.%20%20Add%20coconut%20milk,%20salt,%20pepper,%20banana,%20black%20beans,%20and%20orange%20juice,%20stir%20to%20blend.%20%20Bring%20to%20a%20boil,%20reduce%20heat%20and%20simmer%20for%2015%20minutes.%20%20Using%20an%20immersion%20blender,%20blend%20soup%20in%20pot%20until%20smooth.%20%20Add%20lime%20juice,%20stir%20and%20serve.%20%20Serves%206%20to%208.%20%20(If%20you%20don't%20have%20an%20immersion%20blender,%20you%20can%20use%20a%20counter%20top%20blender,%20just%20transfer%20the%20hot%20soup%20in%20small%20batches.)%3C/p%3E%3Cp%3E%22It's%20a%20recession%20when%20your%20neighbor%20loses%20his%20job:%20it's%20a%20depression%20when%20you%20lose%20yours.%22%20~%20Harry%20S.%20Truman%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20Brownies%20With%20Cherries%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Ugly%20Doll%20Update%3C/p%3E){kind=link}
