%20-%20it%20does%20have%20RED%20in%20it,%20thereby%20making%20it%20the%20perfect%20Valentine%20food%20-%20in%20his%20opinion.%20%20And%20that,%20my%20friends,%20is%20why%20I'm%20giving%20you%20this%20incredible%20recipe%20for%20the%20most%20wonderful%20melt-in-the-mouth%20Truffles%20you've%20ever%20tasted...because%20it%20doesn't%20matter%20WHAT%20you%20have%20for%20dinner,%20these%20will%20be%20the%20perfect%20ending.%3C/p%3E%3Cp%3EBittersweet%20and%20milk%20chocolate,%20cream%20and%20flavorings%20make%20up%20the%20centers%20of%20these%20smooth,%20chocolaty%20morsels...and%20then%20you%20can%20roll%20them%20in%20cocoa%20powder,%20coconut,%20chopped%20nuts%20or%20powdered%20sugar%20-%20even%20colored%20sugars!%20%20I%20chose%20to%20roll%20mine%20in%20cocoa%20powder%20and%20powdered%20sugar%20because,%20as%20you%20know,%20the%20mister%20is%20a%20dessert%20racist%20and%20only%20likes%20white%20desserts...and%20since%20he%20is%20a%20man%20and%20easily%20fooled,%20he%20will%20reach%20for%20the%20truffles%20coated%20in%20powdered%20sugar%20and%20assume%20they're%20white%20through%20and%20through...makes%20me%20smile%20just%20thinking%20about%20it!%3C/p%3E%3Cp%3EThis%20recipe%20takes%20about%20an%20hour%20start%20to%20finish%20-%20but%20that%20includes%2045%20minutes%20of%20refrigeration%20time!%20%20After%20the%20chocolate%20has%20set,%20use%20a%20small%20scoop%20(or%20a%20spoon)%20to%20scoop%20out%20small%20balls.%20%20I%20scoop%20out%20as%20many%20as%20I%20need%20at%20one%20time%20and%20then%20I%20roll%20them%20all%20at%20one%20time%20-%20less%20hand-washing%20this%20way.%20%20Once%20the%20balls%20are%20rolled%20by%20hand%20until%20smooth,%20about%203%20seconds,%20you%20can%20roll%20them%20in%20the%20toppings%20-%20and%20that's%20it%20-%20they're%20ready%20to%20be%20devoured%20by%20you%20and%20your%20Valentine...but%20mostly%20by%20you...why%20waste%20them?!%3C/p%3E%3Cp%3ECocoa%20truffles%20are%20the%20best...the%20powdered%20sugar%20truffles%20are%20not%20as%20easily%20coated%20as%20the%20sugar%20will%20pick%20up%20some%20of%20the%20moisture%20from%20the%20center%20and%20%22bleed%22%20through%20-%20so%20that's%20the%20center%20coming%20through,%20not%20cocoa...I%20was%20very%20careful%20with%20my%20fingers!%20%20But%20no%20matter%20-%20they%20both%20taste%20divine...just%20try%20to%20eat%20only%20one!%3C/p%3E%3Cp%3EChop%20the%20chocolate%20finely%20with%20a%20sharp%20knife.%20Place%20chocolate%20in%20a%20glass%20bowl.%20%20Heat%20the%20cream%20in%20a%20small%20saucepan%20until%20it%20just%20begins%20to%20boil.%20%20Remove%20from%20heat%20and%20pour%20the%20cream%20through%20a%20fine-meshed%20sieve%20into%20the%20bowl%20of%20chocolate.%20With%20a%20wire%20whisk,%20slowly%20stir%20the%20cream%20and%20chocolates%20together%20until%20the%20chocolate%20is%20completely%20melted.%20Whisk%20in%20the%20almond%20flavoring,%20coffee,%20if%20using,%20and%20vanilla.%20Set%20in%20refrigerator%20for%2030%20minutes%20(or%20overnight).%3C/p%3E%3Cp%3EWith%20a%20small%20scoop%20or%20spoon,%20shape%20small%20round%20balls%20of%20chocolate%20mixture%20and%20set%20on%20a%20baking%20sheet%20lined%20with%20%20waxed%20paper.%20%20Refrigerate%20for%2015%20minutes.%20%20Remove%20from%20refrigerator%20and%20roll%20each%20ball%20of%20chocolate%20in%20your%20hands%20until%20smooth%20and%20round,%20about%203%20seconds,%20(don't%20roll%20too%20long%20or%20the%20chocolate%20will%20begin%20to%20melt!)%20%20Roll%20in%20confectioners'%20sugar,%20cocoa%20powder,%20or%20any%20other%20toppings%20you%20like..%20These%20will%20keep%20in%20the%20refrigerator%20for%20weeks,%20(so%20I%20like%20to%20hide%20them%20in%20the%20butter%20compartment%20-%20where%20only%20I%20dare%20go%20-%20and%20then%20I%20can%20have%20one%20a%20day!)%20These%20are%20great%20straight%20from%20the%20refrigerator%20but%20taste%20best%20at%20room%20temperature.%20%20Makes%20about%2060%20truffles.%3C/p%3E%3Cp%3ESince%20this%20recipe%20makes%20so%20many,%20it's%20the%20perfect%20Valentine%20gift%20to%20share...I'm%20taking%20these%20to%20the%20Young%20Women%20at%20church...should%20keep%20them%20quiet%20and%20happy%20during%20the%20lesson!%20%20Happy%20Valentine's%20Day%20to%20you!%3C/p%3E){kind=link}
