- 1 1/2 cups (9oz, 270gr) couscous
- 2 1/4 cups (18oz, 540ml) chicken broth
- 1 tbs good olive oil
- Vegetables:
- 1 yellow bell pepper, cut into 1″ (2.5cm) squares
- 1/2 red bell pepper, cut into 1″ (2.5cm) squares
- 1 medium zucchini, quartered the long way, then sliced thickly
- 1 large red onion, roughly chopped
- 4 cloves garlic, minced
- 2 medium tomatoes, roughly chopped
- 1 1/2 cups (15oz, 450gr) chickpeas, rinsed
- 1 1/2 tsp paprika
- 1 tsp ground cumin
- 1/4 tsp celery salt
- 2 tbs fresh oregano, leaves pulled off stems
- 4 tbs fresh parsley, chopped
- 1 tbs olive oil
