Ingredientes

  • Couscous:
  • 1 1/2 cups (9oz, 270gr) couscous
  • 2 1/4 cups (18oz, 540ml) chicken broth
  • 1 tbs good olive oil
  • Vegetables:
  • 1 yellow bell pepper, cut into 1″ (2.5cm) squares
  • 1/2 red bell pepper, cut into 1″ (2.5cm) squares
  • 1 medium zucchini, quartered the long way, then sliced thickly
  • 1 large red onion, roughly chopped
  • 4 cloves garlic, minced
  • 2 medium tomatoes, roughly chopped
  • 1 1/2 cups (15oz, 450gr) chickpeas, rinsed
  • 1 1/2 tsp paprika
  • 1 tsp ground cumin
  • 1/4 tsp celery salt
  • 2 tbs fresh oregano, leaves pulled off stems
  • 4 tbs fresh parsley, chopped
  • 1 tbs olive oil
